I have been on a Keto journey for a while, and so far, I have lost over 45 pounds since the beginning of 2021. Taking care of my health, begins with weight loss for me. Finding replacements for my favorite foods, has been challenging, but I have found that over the past few years, this has truly become so much easier, as new Keto recipes are being shared, and new Keto products are coming on the scene everyday!

I am loving Kroger’s new Carbsmart bread and yogurt.

The whole wheat Carbsmart bread is the best, and the Kroger Carbsmart Banana Cream Pie flavor yogurt is my new best friend.

When I have a burger now, I can find Keto buns at Aldi, and for French fries, I have found Jicama as a wonderful replacement for potatoes.

Jicama that is uncooked, tastes similar to a pear, and has actually a similar texture of a pear as well. I have tried Jicama with a sprinkle of cinnamon powder and it was a delicious snack. There are endless ways to make this low carb vegetable taste delicious!

The recipe I have today with Jicama, is amazing and in my opinion taste just like French fries. I use my handy dandy Air Fryer for this recipe.I like to dip them in sugar free ketchup.

Air Fryer Jicama Fries

You may be able to find pre-cut Jicama sticks at your grocery store. I found mine, in the refrigerated section of the produce isle. So much easier than cutting a jicama myself. When I am unable to find pre-cut Jicama, I just peel the Jicama, and cut into thin strips that are about 1/3 – 1/2 thick.

I usually season them with a generous shake of my favorite Jocko’s Seasoning. This seasoning mixture is basically salt, black pepper, and garlic powder. It’s the best all purpose seasoning I have found. Jocko’s, is a steakhouse, located in Nipomo Ca. Their steaks are famous and I my opinion, unmatched by any other.

They sell there own seasoning that they use on their steaks. You can find it here.

When I want to make my own seasoning, I usually go with a house seasoning, which is 1/8 cup of garlic powder, 1/8 cup of black pepper and 1/2 cup of salt. This is also Paula Deen’s recipe, and it’s so simple and delicious. I put Jocko’s, or this seasoning on almost everything. From fried chicken, to fajitas, spaghetti, breakfast, and more. It really enhances any recipe, really.

I then blanch these Jicama sticks in boiling water for about 10 minutes, to get them a bit tender. Then, I drain them on a paper towel, and pat them dry.

I then add them in a bowl with a tablespoon of olive oil, and a generous shake of house seasoning. I would say about 1 tablespoon. Toss well to coat.

Add the Jicama sticks to your Air Fryer, and fry them for 15 minutes, at 385 degrees. Give the basket a good Shake in between cooking time.
