Summer Penne Pasta Salad
Today’s Summer Penne Pasta Salad recipe comes straight from my dear Husband, Robert, who has become quite a chef during lockdown. He has been creating some spectacular dishes, and tweaking them to his own flavor and style. He has found his passion for making homemade pizzas, and making delicious tri-tip in our new Smoker.

He has perfected his Rib Eye grilled steaks, by timing them just right for an amazing medium doneness, and now, he has made us this mouth watering Summer Penne Pasta Salad, just in time for grilling season!

One of the best things about this Summer Penne Pasta Salad Recipe, is that it is not too heavy on the mayonnaise, so that it doesn’t drown out the flavors of the other ingredients, and let’s the taste of vegetables shine through. He tries to make us leave it in the fridge for at least 3 hours, but that rarely seems to happen in our household. Everyone wants to have a bite immediately! 

He made sure to let the Pasta and the dressing to chill completely in the fridge, separately before mixing everything together to insure that it begins to chill thoroughly. My boy did it right.
With grilling season now getting started, this Summer Penne Pasta Salad Recipe has become the new staple in our kitchen. The kids ask for him to make this dish for them almost every week!

Ingredients 
1 pound Penne pasta

1 1/2 cup mayonnaise 

3 tablespoons white vinegar 

2 tablespoons sugar 

2 tablespoons garlic powder 

3 multi colored bell peppers diced 

2 carrots diced

1/2 red onion diced

2 celery stocks diced

Cook pasta according to directions on box. Drain pasta well and place in large bowl. Let cool completely. Set aside. In a medium sized mixing bowl, combine Mayonnaise, vinegar, sugar, garlic powder and a dash of salt and pepper. Mix to combine. Set in fridge until pasta is completely cool. Meanwhile, prepare vegetables by dicing them all small and similar in size. When the pasta is cooled, add the vegetables and the dressing, and mix well to combine. Cover and refrigerate for at least 3 hours or overnight.
