Challah Bread French Toast Casserole

I didn’t paint the Mona Lisa or anything, but my husband of 29 fabulous years, and I made some delicious Challah Bread French Toast Casserole.

I had some leftover Challah Bread Rolls, from our annual St. John the Baptist Feast, and I just couldn’t figure out how to use them before they went bad. I didn’t make up this recipe in my head, but I did play around with the ingredients a bit. And I added toasted walnuts!

I love that you can make ahead this recipe and pop it in the fridge overnight. The next day, I just popped in in the oven for 40 minutes, and it was done!

Main Components for Challah Bread French Toast Casserole:

Challah bread – You can use any type of plain or sweet flavored bread. Brioche would be fantastic!

Sugar – I used brown sugar to give that bit of crunch, but you can absolutely use granulated sugar if you prefer.

Heavy Cream – As long as you use 3 cups of dairy in this recipe, it will be great. You can do whole milk, half and half, or heavy cream.

Walnuts – You can absolutely use any kind of regular or toasted nuts, including almonds, pecans, or any other nut that you prefer.

Fruit – I decided to place my blueberries right before I placed it in the oven, and only on top, because I didn’t really want a blueberry casserole. But feel free to add fruit like blueberries and strawberries!

Kitchen Tools Needed:

8×8 Baking dish – I found this to be the perfect size for a serving of 4-6 people. And I prefer glass.

Large Mixing Bowl – It needs to be big enough to handle all the ingredients while mixing.

Rubber Spatula – I can’t live without them

Plastic Wrap – This item is necessary to cover the Baking dish, while setting it in the fridge overnight.

6 eggs
2 cups of heavy cream 
1 cup half and half
4 cups of cubed challah bread 
1 tablespoon vanilla extract 
3/4 cup of brown sugar 
1 teaspoon of cinnamon 
Dash of nutmeg 
3 oz chopped walnuts 
1/2 cup of blueberries 

Spray a 3 quart or 8×8 baking dish with non-stick spray.
Add 4 cups of cubed Challah Bread, evenly spread out into the baking dish, set aside.
In a large mixing bowl, add the eggs, heavy cream, half and half, brown sugar, vanilla extract, walnuts, cinnamon and nutmeg. Mix well to combine.
Pour mixture over the cubed Challah bread, and mix in the baking dish, making sure the bread cubes are evenly coated.
Cover baking dish with plastic wrap and let chill in refrigerator for at least 3 hours or overnight.
Preheat oven to 350 degrees 
Remove plastic wrap from baking dish.
Add blueberries evenly over top of casserole.
Bake in oven for 40 minutes.
Remove casserole from oven and let cool 10 minutes before sprinkling with powdered sugar and a dollop of whipped cream before serving.
