Chicken Egg Salad

Summer is still going strong here in SoCal, and to help cool everyone off a bit, a simple yet delicious twist to our regular egg salad, is a game changer with this yummy recipe for Chicken Egg Salad.

This dish comes together so quickly when I use store bought boiled eggs, store bought bacon bits, and store bought rotisserie shredded chicken. Now, I have made this Chicken Egg Salad before completely from scratch, and the taste is the same deliciousness. But for those days when we want to spend a day on our boat, using store bought shortcuts, gets me out of the house, and enjoying the day much quicker.

The Honey Dijon Mustard flavor in this Chicken Egg Salad recipe brings a delicious kick, while adding a bit of sweetness to the dish. I have been using this dish as a keto friendly side by omitting the honey dijon on those keto days.

The purple onion adds a wonderful flavor. I am becoming a big fan of using purple onion these days. I also added celery, carrots, bacon bits, mayonnaise and a bit of Jockos Seasoning, that adds a wonderful combination of spices. If you dont have Jocko’s on hand, salt, pepper and garlic powder does the trick.

For even more flavor, add a bit of everything bagel seasoning! That stuff is amazing in any recipe!

Chicken Egg Salad recipe:

2 cups of shredded cooked chicken
12 boiled and peeled eggs
1/3 cup of cooked bacon bits
1/3 cup of chopped celery
1/4 cup of chopped carrots
1/4 cup of diced purple onion
1/4 cup of honey Dijon mustard
1/3 cup of mayonnaise
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp garlic powder

Begin by smashing up the boiled eggs, then
add everything to the bowl of an electric
mixer, and mix until combined. Serve cold
and enjoy!
