Best Ever Banana Pudding
So, like everyone else, we have been indoors eating a lot of bananas. Like, a lot. From banana bread, to banana muffins, to pizza. I can’t complain about it though because I love bananas. I feel like a little yellow minion from despicable me sometimes, on how much I love bananas. When there is none in the house, I get really sad. So whenever I have extra bananas hanging around, I have to make a batch of my Best Ever Banana Pudding.
In all seriousness though, my family and I have been social distancing since February. The little things we loved to do as a family has changed. Going to theme parks, going to the mall, shopping for antiques, going to the theaters. But I know that one day, we will all be enjoying those wonderful things we took for granted, again, but for right now, we are trying to do our part and stay home.
The one thing that we have been doing more of, like most people these days, is cooking. Food has sparked such a passion for my whole family. My husband has begun making pizzas from scratch, which one day soon I will post his many adventures in pizza making. My kids, that are in there early twenties, are now frying everything!
From Twinkies, to Oreos, to cheesecake, to mozzarella cheese. If they see it, they fry it. My husband has been on a sous vide kick, as well as getting ready to make the ultimate fried rice with Wagyu! I can’t wait to post that recipe!
My daughter has been helping me in our small patio garden, where I have tomatoes, zucchini, strawberries, lettuce, spinach, arugula, onion and cucumber growing. Some plants are thriving, some I have accidentally killed. Still working on my green thumb.
I found this recipe online, and while I have made banana pudding in the past, using vanilla pudding as the base, I wanted to try it using this banana shake flavored pudding from Sonic. And I have to say that this banana pudding along with the chessmen cookies, is super delicious and addictive! A bowl of this and Netflix is all I need to make it the ultimate movie
night!
Ingredients
- 1 package of banana pudding mix 3 oz
- 1 can of sweetened condensed milk
- 1 1/2 cups of cold water
- 3 cups of heavy whipping cream
- 3 thinly sliced bananas
- 2 packages of Chessmen cookies
Instructions
- In a medium sized bowl, combine banana pudding mix, can of sweetened condensed milk, and water, until mixed well. Cover with plastic wrap, and refrigerate at least 4 hours or overnight. After pudding mix is firmed up, make whipped cream by adding heavy whipping cream to a stand mixer, and beat on high until soft peaks have formed. About 6-7 minutes. Gently fold pudding mix in with whipped cream until light, fluffy, and fully incorporated. In a large casserole dish, place one layer of chessmen cookies. Then half of the pudding. Spread evenly over cookies. Then place thinly sliced bananas over top. Then add the rest of the pudding, and spread evenly over sliced bananas. Then top with more chessmen cookies. Place in refrigerator for 2 or more hours to chill. Serve and enjoy.
