Light and Easy Mango Salsa

Omg you guys! I’m back after a long time out. I needed this time to make some tough decisions. And one of those decisions, might include a huge move from California to somewhere else. California is just getting too expensive for a family who are not actors, singers, celebrities, or real estate developers.

I would love to stay, as, this is where I have been since I was a pre-teen. But, life moves on. And to celebrate the wonderful state of California, I decided to make something light, and fresh, for the end of Summer. The end of a very long, hot, and challenging summer. It has had it’s ups and downs, and I am hoping that the fall will be fantastic!

I have big plans for the fall, including a trip to Disneyland, for Mickey’s Halloween Party! I will be updating my post on this whimsical, and oh, so fun event, with new, pics, and new foods that I will be trying out while we are there!

But for now, we are still in summer, and delicious fruits are still around, and that is why,  I decided to make something I’ve never even tasted before. A mango salsa! I have never tried Mango Salsa, although, I have heard so much about it, and I have to say, it was the best salsa, I have ever had! Yes! you heard me right!

I did not know how easy it was to put together. I did not have whole kernel corn to add, as I only had a can of creamed corn, and guess what? It was the best addition to this dish! Not only did it give it fantastic flavor, but the creamed corn, made it more like a texture of traditional tomato salsa! And the best part? My kids loved it too!

The purple onion gave it the kick it needed, and the avocado, was perfectly ripe. I learned how to slice a mango on Pinterest, and I love how my Mango Flower turned out!

Serve with chips, for a delicious summertime treat! This dish is sure to be a crowd pleaser!

Mango Salsa

Ingredients

  • 1 diced mango
  • 1 diced avocado
  • 1 diced tomato, seeded
  • 1/3 cup finely chopped red onion
  • 1/2 cup creamed corn
  • 1 tablespoon finely chopped cilantro
  • 1 tablespoon fresh lime juice
  • Salt and pepper to taste
  • Tortilla chips for dipping

Instructions

  1. Combine everything except the tortilla chips, in a large bowl. Serve with chips and enjoy!
