Crispy Fried Tacos Dorados

In Anaheim, there once was a little taco place called Jimboy’s. And before every Disneyland visit, this taco place was the first stop. Yes the food in the park is fantastic, but we couldn’t go to the park without having one of the delicious fried tacos from Jimboy’s

The Crispness and the dusting of Parmesan Cheese on top, was amazing and something we always craved. So when Jimboy’s left that location, we’re were very sad, so that’s when I decided to make these delicious Crispy Fried Tacos Dorados at home.

This couldn’t be simpler and it just takes a few ingredients to come together. I use store bought taco seasoning as it is easier to use and put this copycat recipe together.

I use ground beef in this recipe, but you can also use shredded beef, pork, or chicken as well.

Tacos Dorados feature crispy golden fried tortillas with classic flavor packed seasoned ground beef, two types of cheeses, and an immediate dusting of Parmesan cheese, gives the perfect balance of crunch and amazing flavor. I think that the dusting of Parmesan on a taco is genius!

I love to dip them into a green tomatillo salsa, that creates the perfect mealtime treat!

Fried Tacos Dorados ingredients:

1 pound of ground beef 

10 corn tortillas 

3 tablespoons taco seasoning 

1 cup vegetable oil for frying 

1 cup shredded cheddar 

1/2 cup shredded Monterey Jack cheese 

Finely grated Parmesan 

1/4 cup of water 

Instructions:

Begin by preparing the taco filling, by adding ground beef to a large pan on medium heat, that has been coated with a bit of cooking spray.

Brown the meat and break up any large chunks, until it’s no longer pink.

Drain excess fat, and add in 3 tablespoons of taco seasoning.

Add in 1/4 cup of water and cook for a few more until everything is combined. Transfer to a large bowl.

Wipe frying pan clean with paper towels, and add in vegetable oil, and heat over medium heat. Meanwhile, prepare corn tortillas.

Working in batches, warm 3 or 4 tortillas in the microwave for 20 seconds.

Place about 2-3 tablespoons of taco meat in a tortilla shell, along with 1 tablespoon of each shredded cheeses.

Place the prepared tacos in the frying pan carefully, and fry tacos on each side for 2-3 minutes per side.

Remove tacos from pan, and place on a paper towel lined plate to drain excess oil

Immediately dust tacos with grated Parmesan cheese.

Repeat process with remaining tacos.
