Millionaire Shortbread Bars

I’m hoping to manifest a million this new year. And I usually cook all the traditional new years foods on New Year’s Day. This year, I wanted to make a new tradition, by making these delicious Millionaire Shortbread Bars.

I think they are names million dollar, or millionaire, because they are so rich and decadent. If I had edible gold leaf, I would have added that to this scrumptious, dessert.

I love to ring in the new year with foods that represent good luck, and sho doesn’t want a million dollars right?

I love how easy this recipe for Millionaire Shortbread Bars is, because although I could have made everything from scratch, on New Year’s Eve, I just don’t have the time. So that’s why, this way is so much simpler. 

I just used my food processor to make the crust from shortbread cookies. They were done so quickly. And I just melted some Kraft caramels in the microwave until smooth and poured right over the baked crust. I then used melted milk chocolate chips for the final layer. Super easy.

These Millionaire Shortbread Bars were rich, and decadent, full of chocolaty goodness and silky caramel. It’s giving me a snickers vibe. Super yummy. Only problem is, that I can take this whole pan down, if I don’t stop myself.

Ingredients for Millionaire Shortbread Bars:

14 oz pack of shortbread cookies 

8 oz melted butter 

11 oz caramel 

10 oz milk chocolate chips

Flaky sea salt

Pre-heat oven to 350 degrees.

Place shortbread cookies in a food processor and pulse until they are fine crumbs.

Place shortbread crumbs in a large bowl, along with melted butter.

Stir to combine until it looks similar to sand.

Place in baking dish and pat down to form a crust 

Place in oven, and bake for 20 minutes, until golden. 

Remove from oven and let cool about 15 minutes.

In a medium bowl, melt caramel in 30 second intervals in microwave until smooth.

Pour melted caramel over cooled crust, and use a spatula to smooth caramel all over crust.

Place the baking dish in fridge to cool completely, about 20 minutes.

After 20 minutes, remove baking dish from fridge.

Melt chocolate chips in microwave in 30 second intervals, until smooth.

Pour melted chocolate over caramel layer and use a spatula or spoon to smooth gently over caramel layer. 

Let baking dish sit for about 5 minutes, then sprinkle with flaky sea salt.

Chill until set, about an hour.

Slice into bars and serve.
