Peanut Butter Lumps of Coal

Everyone is making Christmas cookies left and right. But today is a grumpy day for me, lol, so I am making these delicious Peanut Butter Lumps of Coal.

I wanted to try something easy, no bake, and fun!

Look, in life, we have all gotten a lump of coal or two, so why not make ‘em super yummy and sweet!

Actually, I have been making a lot of cookies this week, but they are cookies that I have shared before. But my kids ask for them time and time again, and I wanted to show them something different.

These delicious Peanut Butter Lumps of Coal are super quick to come together.

And I had everything already in the house!

Seriously, not one thing I had to go out for, so that was great because I love using what I already have, and it clears up some space in the pantry.

Once you get everything mixed, just use a cookie scoop and place in your hand and roll each scoop into a small ball and place on a piece of parchment paper.

Peanut Butter Lumps of Coal

I melted the chocolate using a double boiler method, and I used two forks to gently cover each ball with melted chocolate, then I gently placed them on the parchment paper to harden up.

I did place them in the fridge to set up for about 20 minutes before serving them in cupcake liners.

This is such a fun idea for the kids to get involved in the kitchen. If my kids were younger, I would have loved to have them help me with this recipe, but my kids are all grown, and only come into the kitchen when food is already done. Yep.

Peanut Butter Lumps of Coal

Peanut Butter Lumps of Coal

1 1/2 cups of creamy peanut butter 

1/2 cup of softened salted butter 

3 cups of puffed rice cereal 

1/4 cup of sliced almonds 

2 cups of confectioners sugar 

8oz chocolate chips 

1 tablespoon butter 

In the bowl of an electric mixer, combine 1/2 cup softened butter, and peanut butter until creamy.

Add in confectioners sugar and combine.

Add in sliced almonds 

Add in puffed rice cereal 

Using a mini cookie scoop, place in hand

Roll into balls and place on a parchment paper lined baking sheet.

Using a double boiler method, melt chocolate chips with 1 tablespoon of butter, until melted and smooth.

Dip dough balls in melted chocolate using two forks, and place on parchment paper to let chocolate set.
