I’m on an adventure with vegetables. I love to find things to do with them that are different than just baking, sautéing them, or grilling veggies. My son won’t eat vegetables! No matter what I do, he won’t touch vegetables very much. My husband won’t either! My nephew will not touch anything but cookies and Cheetos, so I am determined to get veggies in their diet, one way or another.

So that is why, I am officially starting a hidden veggie series. I give full credit for these ideas to The Sneaky Chef cookbooks and deceptively delicious series by Jessica Seinfeld. Both of these ladies have given me inspiration over the years, and I have added hidden vegetables in so many meals and desserts because of my husband and son, and now that my nephew has stayed with us, and he is totally anti-veggie, I have resorted to hiding them in foods, just to get some nutrition in them somehow.
My sister, who is my nephews mother, says “well, your just fixing one problem, but adding another problem of too much sugar in their diets “. And I can see where she is coming from, but I also added that her son going to eat nothing but junk food anyway, so why not add veggies to them. He begs for the boxed brownies and boxed foods at the store, and I’d rather make them myself knowing that I can control how much sugar is going in them, and no preservatives and the addition of zucchini!

And once I try these Chocolate Chip Zucchini Brownies on the kids, I can go on to adding even more veggies to them, such as spinach, puréed chickpeas, and blueberries! But for now, we are starting small and going with zucchini, and boy was it a big hit!
You really could not tell that there was any zucchini in these brownies at all. My husband loved them, and he even said that I should try adding more veggies next time. My sister was surprised. She thought it could not be done.
And these hidden veggie zucchini brownies, were so easy to get going. Just mix your dry ingredients first in a medium bowl, then add your wet ingredients in a separate bowl, and set aside. Then, you can shred a zucchini, to make about 1 cup worth, and stir everything together, until well blended.
Then just place them in an 8×8 baking pan, with a piece of parchment paper hanging over the edges for easy handling. Bake for 22-23 minutes, and they are ready to go! (Once they have cooled a bit first).

Adding puréed baby food to recipes could not be simpler. Finding puréed carrots, butternut squash, and sweet potato may be easy, as far as baby food goes, but for other veggies that can be hidden, such as cauliflower, broccoli, white beans, zucchini, spinach, and so forth, it can be a challenge, and that is why I got my handy dandy Food Processor ready to go. I use this Hamilton Beach processor, at target for $42 by price matching it to one I found on Amazon!

So now, I am prepared to take on this veggie challenge and see how far I can go. I’m equipped with my essentials now, and I am ready to turn any vegetable that may seem unsightly to the average child, or child-like adult, and turn it into a dish, that everyone will love.
Chocolate Chip Zucchini Brownies

Ingredients

  • Ingredients
  • 1 cup of shredded zucchini
  • 1 cup of granulated sugar
  • 1/3 cup of unsalted, melted butter
  • 1/3 cup of unsweetened cocoa powder
  • 1/2 cup of semi-sweet or dark chocolate chips
  • 1/2 cup of all purpose flour
  • 2 eggs
  • 1 1/2 teaspoons vanilla extract
  • 1/4 salt
  • 1/4 baking powder

Instructions

  1. Preheat oven to 350 degrees.
  2. In the bowl of an electric mixer, combine eggs , sugar and vanilla and mix on low until well combined. Slowly begin adding flour, salt, cocoa powder, and baking powder, that have been sifted together. Mix until combined, then add melted butter, and shredded zucchini , and let mix a bit more. Add in chocolate chips, and mix until brownie batter is combined.
  3. In an 8x8 baking pan, that is covered with parchment paper hanging over the sides, pour brownie batter, and spread evenly. Bake for 22-23 minutes. Remove from oven, and let cool on a baking rack. Cut into 9 brownies and serve.
