Slow Cooker Pot Roast
Today I am battling allergies. I just got home from vacationing in Florida, and on the flight home I developed allergies from the altitude change. It happens to me every time I travel. So when I got home I thought I would  make a comforting meal for the family to help with allergies and jet-lag. In my up coming posts I will talk about our trip to Orlando, but for right now here is some good old family comfort food.
This meal could not be easier, and it is one of those meals where you just dump and go! On a busy day, when you just do not have time to plan out your meal, but you still want it to look and taste like you put so much planning and thought into it. This is a no-brainer! and the hubs will love it! It is such a comfort food, and absolutely delicious!
And it can very very cost efficient especially when Chuck Roast is on sale! If you keep a box of the soup mix, and cans of condensed cream of mushroom soup in your pantry, than you will always have something to throw in your Crock Pot. And later, when you start to smell what is cooking in there, you will not regret this decision!
And I have found that even without adding liquid to this Slow Cooker Pot Roast it will still make a delicious gravy!
Slow Cooker Pot Roast

Ingredients

  • 1 3-4 pound Chuck Roast
  • 2 (10.75 ounce) cans condensed cream of mushroom soup
  • 1 package dry onion soup mix
  • 1 cup water or beef broth (optional)
  • 3-3 1/2 pounds pot roast
  • 3 cups cut or baby carrots(optional)
  • Salt
  • Ground pepper
  • Garlic powder

Instructions

  1. Begin by placing carrots (optional) at the bottom of slow cooker.
  2. Season chuck roast on both sides with salt, black pepper and garlic powder and place on top of carrots in slow cooker.
  3. In a small mixing bowl or measuring cup, combine 2 cans of cream of mushroom soup, package of onion soup mix and 1 cup of water and mix well.
  4. Pour soup mixture over chuck roast and cook on high in slow cooker for 5-6 hours or on low 8-10 hours. The roast will be tender and falling apart when done.
  5. This recipe is so simple and so delicious. I can cook this anytime of the week and my family loves this meal. Pair this with some asparagus, corn or veggie, and some mashed potatoes or egg noodles and dinner is served.
