Pork Tenderloin in Tomato Sauce
I love to make variations in the recipes that I try. And this recipe for Pork Tenderloin in Tomato Sauce is a delicious variation of Pork Tenderloin Medallions in a Savory Sauce.
When I want to start using up ingredients in the pantry, I try to find ways of using those ingredients in recipes that I regularly make in my rotation of weekday meals.
I love how a simple tomato sauce can make any ingredient become something different and delicious. I always have a can of crushed or whole tomatoes on hand, if not a few of them.
This is a wonderful meal that is both something that I cook on weeknights but also for guests with big appetites!
The flavors are even better the next day if they’re are any leftovers, and you can also freeze it in a freezer safe ziplock bag for up to three months, so it makes a wonderful freezer meal. Simply defrost in the fridge overnight and heat to warm through.
- 1 pork loin
- 1 28 oz can or crushed tomatoes
- 1 small onion sliced
- 2 tablespoons of olive oil
- 1 teaspoon of minced fresh rosemary
- 1 teaspoon of minced fresh thyme
- 1 teaspoon of Italian seasoning
- 1 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 3 tablespoons of butter
- Pre-heat oven to 350 degrees.
- Season pork tenderloin on all sides with salt, pepper and garlic powder.
- In a large pan on medium-high heat, place olive oil.
- Place pork tenderloin in pan, and cook for about 2-3 minutes per side, until browned a bit. Turn off heat from stove.
- Remove tenderloin from pan, and transfer tenderloin to a large piece of non-stick foil.
- Place tablespoons of butter on top of tenderloin.
- Sprinkle minced fresh thyme and rosemary on top of tenderloin as well.
- Close the foil around tenderloin to create a packet, by folding the top pieces together, and crimping the edges, as shown in photos.
- Place tenderloin foil packet on a baking sheet, and place in oven and bake for 40 minutes.
- Meanwhile in a large skillet, in medium heat, add in 1 tablespoon of olive oil.
- Add in sliced onions and cook until they become translucent.
- Add in can of crushed tomatoes and Italian seasoning.
- Cook tomatoes for about 5-7 minutes on medium heat.
- Slice baked tenderloin into medallions that are around 1 inch thick.
- Add pork slices to tomato onion mixture and let cook on medium-low heat for a few minutes or until everything is incorporated.
- Serve over rice.
