Cucumber, Onion, Avocado, and Tomato Salad!
It is screeching hot, here in SoCal! Like, 105 everyday kinda hot. Melt yo skin off kinda hot! Sofinding ways to cool down, and things to eat without putting on the stove and making the house even hotter, is kind of challenging. That is where light, and refreshing salads come in. And this Cucumber, Onion, Avocado, and Tomato Salad! is a winner!
It is so simple to put together, and I already had everything I needed, just hanging out in the fridge already, so throwing it together was simple, and easy! And that is what we need on those hot summer days at home. Simple, and easy!
I love the taste of cucumber, because it is so fresh, and light. It is mostly made of water, and it will cool you down fast! Maybe that is why the saying is cool as a cucumber. I don’t know. What I do know for sure, is that my teenage daughter loved this salad so much, that she stole the bowl and too it into her room to enjoy. She is a big onion fan, and she said netflix is waiting, and this salad is going with her. So off she went, with my salad.
All that is needed for this super simple, yet delicious salad, is a few tomatoes, a big cucumber, one avocado, and some thinly sliced onion. Any onion will do. I would have made this with purple onion, but any onion works well. Just make sure and slice it thin. That is how it just kind of combines with the other flavors, yet it is not overpowering, the way onion can sometimes be. And you know what? This would be so yummy on toast as well! Perfect lunch for summer!
Summer, is one of those seasons, where I like to just hang out at home after vacay, and relax and eat good food. And when I say vacay, I mean hanging out at Universal Studios, which is about 20 minutes from my home. On hot days like today, the park is just impossible, so staying fresh, is what I like best, and that is why I love this Cucumber, Onion, Avocado, and Tomato Salad! The avocado brings a delicious guacamole flavor to the party, and the onion, and tomato, give a rich depth of flavor. Just a light splash of olive oil, and salt and pepper, and your done! So try this salad on a hot summer day, and stay cool my friends!
- 2 tomatoes cut into chunks
- 1 cucumber sliced
- 1 avocado cut into chunks
- 1/2 cup thinly sliced onion
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- Place everything into a medium sized bowl, and toss well to combine. Chill in refrigerator for 2 hours, then serve.
