Strawberry’s are on sale again, and I just had to try making a batch of delicious, and sweet Strawberry Muffins. No you can use almost any fruit that you want in this recipe, like blueberries, or peaches, but my daughter, just loves strawberries, and since they are in season, that is what I am making today.
You can just smell the sweet aroma, of these muffins, almost as soon as you pop them in the oven, and they could not be more simple to make. You just combine the dry ingredients with the wet ingredients in a large bowl, and mix in the strawberries. I baked them in these so cute baking cups, that you can find here. These baking cups, give them a down-home country feel to them, and they look perfect for the spring.
These Strawberry muffins, are a picnic must, and I love them for breakfast with a hot cup of coffee! Super easy, and super yummy. A must try!
1 1/2 cups all-purpose flour
1 cups sugar
1/2 cup milk
1 tsp. baking powder
1/2 tsp. salt
1/2 teaspoon vanilla
1/2 tsp. cinnamon
2 large eggs beaten
1/2 cups vegetable oil
1 1/2 cups fresh strawberries sliced and slightly mashed
INSTRUCTIONS
Preheat oven to 350 degrees.
Combine all-purpose flour, sugar, baking powder, cinnamon, and salt, in large mixing bowl.
In small bowl, combine eggs, vanilla, and oil.
Stir strawberries into egg mixture.
Blend in flour mixture until thoroughly combined, but do not over beat.
Spoon into greased muffin tins until nearly full.
Bake for 20-25 minutes, or until a toothpick inserted in center comes out clean.
