I have said it before, and I will say it again. I love using leftovers. I don’t know about you, but I just hate wasting any food. When I have to throw away leftovers, because the family got bored, and did not want to eat it a second time, it makes me want to cry. That is why I love to use leftovers to create different dishes, such as these Leftover Pot Roast Quesadillas, which are so freakin’ good!
I spend so much time in the kitchen, cooking, and putting all of my time and effort into the meals I make, that when food goes to waste, so does my spirit!
Okay, okay, maybe, that is getting too deep, but still, using up leftovers makes me a happy mama! When I make Pot Roast, I usually have some roast leftover. Now my son, is crafty, as he will sneak into the kitchen after midnight, and make himself a sandwich of leftover pot roast, covered in mayo. How do I know this? – Well, it is because, when I awake in the morning, to fix myself a cup of coffee, I will find a jar of mayo, that my son, forgot to put back in the fridge. Evidence? I’d say so.
Now, with even more wasted food! Have to throw away a newly opened jar of mayonnaise and put mayo-again on my shopping list!
So with these Leftover Pot Roast Quesadillas, I found out that the kids, can’t stop loving them! And, it is so simple! Just shred the leftover pot roast, and place some on a tortilla, along with some shredded cheddar, and some re-fried beans (optional) and top with another tortilla.
Place in a pan, or better yet, a grill pan, like the one I bought that I think is so fantastic, and grill with some non-stick spray, or even better, a pat of butter. Cook, until Quesadilla, is crispy, and cheese has melted.
You can serve this with a side of salsa, sour cream, and a little chopped tomato, and now, we have a whole new meal, with ingredients, that are always on hand. I always have a pack of tortillas in my bread box, and sour cream is always on my shopping list. I use sour cream in many of my secret cake recipes for Cakeberry Bake Shop, as well as, I just love dipping anything in sour cream. It has so many uses! I had a few cans of re-fried beans, that were on a super sale, so this was coming together perfectly!

So, now you know what to do with all of that leftover pot roast. Just don’t forget to put away the sour cream!
Ingredients
- Leftover Pot Roast, Shredded
- Tortillas
- Shredded Cheddar Cheese
- Canned Re-fried Beans
- Non-Stick Spray
- Toppings, like salsa, and sour cream
- Green Onion or cilantro for garnish
Instructions
- Place about a tablespoon or two of re-fried beans on a tortilla, and spread evenly.
- Place some shredded leftover pot roast, evenly on top of tortilla as well.
- Place about a tablespoon of shredded cheddar on top of tortilla.
- Cover with another tortilla.
- Place in a pan, or grill pan, that has been sprayed with a bit of non-stick spray, and cook on medium-high heat, until a bit crispy on each side, and
- cheese has melted. About 1-2 minutes per side.
- I was able to make 4 Quesadillas, from the amount of pot roast I had leftover.
