I’ve been using my Instant Pot for over a year now, and by far, my favorite recipe has to be these Low Carb/keto Instant Pot Baby Back Ribs. Super easy, low carb, and fast! I have done this on a weeknight. A weeknight people!

This recipe has saved my mind from trying to figure out keto meals for the week. My husband and my kids love them.

My husband is so happy to be eating ribs without worrying about his blood sugar rising, and he has no guilt.

He is one happy camper with these Low Carb Baby Back Ribs. I place a salad along side, and we are good to go!

I find the Instant Pot very easy to use once you get the hang of it. I have made a few other dishes in the Instant Pot, but low carb baby back ribs has been the main reason I bought the Instant Pot in the first place.

You should remove the membrane on the back of the rib rack. It’s like this tough film, that you can remove by separating a little from the end of the rack of ribs with a knife, then getting a good grip on the film , and pulling of the entire rib rack.

I have gotten lucky most of the time and have been able to take of this film in one go. A few times it’s been difficult to take off, and I had to struggle to remove the film in pieces but for the most part, it should come off pretty easily.

After the membrane is removed, I start to sprinkle generously with my low carb rib rub on both sides of the rib rack. I actually was able to fit two racks of baby backs in my Instant Pot. I placed them standing up.

Add in 1 cup of water, then close the lid and twist to lock the lid in place. Be sure that the valve on top of the lid is set to sealing position.

Set to HIGH manual pressure for 25 minutes. Allow to naturally release for 10 minutes, then move valve to quick release until all steam as is gone. Open lid carefully, and remove ribs using tongs.

 Place ribs on a foil lined baking sheet. Brush rib portions with favorite low carb barbecue sauce.

Place ribs in oven and broil for 5 minutes. Remove from oven and onto a plate. Enjoy

G Hughes is my favorite low carb barbecue sauce. On chicken, shrimp, or beef, it is fantastic as well. I always have a bottle in my fridge for dipping. These ribs fall off the bone. And that’s the way I love to eat them.

Our favorite place for ribs has sadly closed in two locations near us, and finding a good place for ribs has proven difficult, and now that we are eating mainly low carb, has made ribs even more difficult to enjoy.

That was until I found G Hughes low carb barbecue sauce and my Instant Pot, and now I can enjoy ribs whenever I want.
With the holidays right around the corner, I can make these Low Carb Baby Back Ribs on a busy day, and still get a great meal on the table.
