Easy Artichoke Heart Spinach Dip

One of the things that I like to do, is to create restaurant style food at home. Whenever we are dining out, we usually start off with an appetizer, and if Spinach dip is on the menu, I am all for it! I love the flavors, and the texture, and I am a big fan of anything cream cheese.

This recipe for Easy Artichoke Heart Spinach Dip, is just that. Super easy! It was done in no time at all, and then it was gone in a flash! Once you prepare this dish, it magically disappears before your very eyes! My kids took it down, and wanted seconds!

The key to this recipe, that I found, was to let the cream cheese come to room temperature. I did this by just placing it hear my Antique Wedgewood Stove. The heat that comes off my 1949 stove, just helps the packet of cream cheese come to room temp, in a very short period of time, but if you don”t have and antique stove, you can just leave the block of cream cheese to sit on the counter for about an hour or so, and that will do just fine.

While that is coming to room temp, I placed about a cup each, of frozen artichoke hearts, and frozen spinach in a small sauce pan, with about a cup of water. I let it come to a medium boil, to make sure everything was soft, and then I drained it well in a colander. once the block of cream cheese was softened, I scooped the cream cheese in a large bowl, along with the drained artichoke hearts and spinach, and I added in a few spices, and a cup of grated Parmesan cheese. I stirred it well to combine, and popped it in the microwave to warm up, nicely, and it was ready to serve!

Ingredients

  • 1 cup canned artichoke hearts or 1 cup frozen artichoke heart, chopped
  • 8 ounces cream cheese, softened
  • 1?2 cup spinach, chopped, thawed
  • 1?2 cup parmesan cheese, Grated
  • 1?4 teaspoon salt
  • 1?4 teaspoon garlic powder

Instructions

  1. Boil spinach and artichoke hearts in a cup of water in small saucepan over medium heat until tender, about 10 minute.
  2. Drain. Stir softened cream cheese in a medium bowl.
  3. Add spinach and artichoke hearts to the cream cheese and stir well.
  4. Add remaining ingredients to the cream cheese and combine.
  5. Microwave for 1 minute.
  6. Stir.
  7. Serve hot.
