Breakfast Egg Rolls

 

So this delicious recipe, is brought to you today, by my Husband, who thought of placing scrambled egg, sausage, bacon, and cheese, and roll it up into an egg roll wrapper. Now, I know that I am not the first one to try this, but boy, what a fantastic idea! Now it has the rest of my family, thinking up ideas to place in egg rolls.

Once you have your ingredients ready to go, wrapping up the egg rolls is pretty straight forward. The important thing to do, is to have everything already cooked, like the scrambled egg, bacon, and breakfast sausage links. To make the egg roll, you just place a bit of water all along the edge of the egg roll wrapper, then place your ingredients in the center. Then, fold up the sides first, then the bottom flap. Roll it toward the top flap, to seal it closed. That is what the wet edges are for.

Repeat these steps, with the remaining egg rolls, and then get your oil heated up, in a deep frying pan. Once the oil is hot enough, just slowly place the egg rolls in oil, and fry for like, less than a minute per side. They will brown up very quickly, so be sure to keep an eye one them. Don’t walk away from the stove, or they might burn.

Once they are browned on both sides, quickly remove them from frying, and place them on a paper towel lined plate to drain excess oil. I love to serve them with hash browns, of breakfast potatoes, and some ketchup for dipping.

The kiddos, will love eating this, and so will everyone else. My Husband had an awesome idea, that I think will become a breakfast favorite! And he even took all the beautiful pictures! He has become quite the photographer!

 

And the best part is, that you can use your imagination, and come up with all kids of breakfast foods, to fry up in egg rolls. I added cheddar cheese, but you can use any kind of cheese you like.

Think, ham, smoked sausage, turkey bacon, even steak! This was so good, and so much fun to make.

Ingredients

  • 6 egg roll wrappers
  • 6 slices of cooked bacon
  • 6 cooked sausage links
  • 6 cooked scrambled eggs
  • 1/2 cup shredded cheddar cheese
  • Oil for frying

Instructions

  1. Place a bit of water on the edges of the egg roll wrapper, then place one scrambled egg, one sausage link, one slice of bacon, and 2 tablespoons of the shredded cheddar. Fold up the bottom end of the egg roll wrapper, then bring in the two side pieces, then roll the whole thing closed, to create an egg roll. Set aside, and repeat for the remaining rolls.
  2. Place about an inch of oil in a frying pan, to heat up. Once oil is hot, place about 3-3 egg rolls in oil to fry up. They will brown very quickly. Less than a minute, before you flip them over carefully, and let the other side brown up. Once golden brown, on each side, remove them immediately from frying, and transfer the egg rolls to a paper towel lined dish to drain excess oil. Repeat cooking process for remaining egg rolls.
  3. Let cooked for a few minutes, then serve with a side of hash browns
