Vanilla Custard Pie

 

 

When grandma comes over, there is nothing but good times, laughter, and great food. We are always in the kitchen, gossiping about family, friends, and sharing delicious recipes, like my awesome Vanilla Custard Pie, that I am sharing today. She tells me all of the gossip around town, and she always has beauty tips to share. She used to make the most delicious cheesecakes, that would have everybody buzzing, and wanting her secret recipes.

These days, grandma doesn’t cook big dinners, or baked goods that often. She has forgotten many of her recipes, and rest, and relaxation, is what she craves most. She has been through a lot lately, and she is here on her most recent visit to see how my brother-in-laws doctor visits, have been going. My husbands brother has been battling stage 4 colon cancer, and she stays with us, when she comes to see how his chemo treatments are going.

So, in between hospital visits, I like to cook for them, and make a sweet dessert, that will hopefully take their mind of of things for a while. Chemo visits, can be very stressful, and I love this family. Even when the household gets stressed with so many people in each others spaces. Family, to me is very important. That is where my spring baking comes in.

Spring has begun, and that means spring baking is in full gear around here. For Easter, we will be hosting a big family meal, with all the fixings, so brushing up on my baking skills is a must. The whole family will be coming over, and the table needs to be beautiful. Since my brother-in-law, and his family will be over, I am trying to get my Easter menu ready for guests. Lots of them!

Spring, for me, is meant to be a time of renewal. A renewal of spirit, and a renewal of a new year of celebrating life, love and family. And this is where I will be sharing my Vanilla Custard Pie, that is one of grandma’s favorites! So take a look, and get some inspiration for your spring baking!

 

Vanilla Custard Pie

Ingredients

  • 4 eggs
  • 2 1/4 cups milk
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Sprinkle of nutmeg
  • 1 10 inch refrigertated pie crust, or homemede pie crust

Instructions

  1. Preheat oven to 400 degrees. Roll out pie crust on a 9.5 inch pie plate. and bake for five minutes.
  2. Remove from oven, and let cool. In a large bowl, mix together eggs, and sugar, until creamed. Then mix in milk, salt, and vanilla, until well combined.
  3. Pour egg mixture into pre-baked pie shell, and sprinkle with nutmeg.
  4. Bake for 15 minutes, then lower temprature of oven to 325, and bake for another 35-40 minutes.
  5. Remove from oven, and let cool, on a cooling rack.
  6. The middle will still be a little giggley, but will fim when cooled in refrigerator. Serve chilled.
