Valentines Day, is such a sweet day. And I mean that literally! My kids love making sweets, cookies, cakes, and candy that day. Although, my husband and I have had date night on Valentine’s Day, It usually is a whole family day, to show each other how much we care and love each other as a family.

In other words – The kids always want to go to dinner too! Lol! So we make it a family date night of a nice dinner out. This year, I wanted to make something that the kids, and hubby would enjoy, so I decided on these Strawberry Cake Mix Cookies with Valentine’s Day Candy Sprinkles!

I love that it comes together so quickly when using Strawberry cake mix. Just add 2 eggs, a bit of oil, and some vanilla extract. The cake mix, is already pink, but I added in some hot pink gel food coloring, that can be found online, or at your local craft and hobby stores. This step is optional, and if you like, you can even use red food gel color instead of pink, or you can even use just white cake mix, and add any color gel food coloring you like, for that matter. –

Think Easter – Pastels

Saint Patrick’s Day – Green

4th of July – Red, White and Blue

Halloween – Orange

Christmas – Red and Green

or any other holiday or occasion.

I just used a bit of melted white chocolate to use as edible glue, to attach some conversation heart candies, and some red, heart shaped sprinkles. They look so festive, and the family loved them! Quick and easy, and the conversation heart candies, tell them how much you care!

 

Strawberry Cake Mix Cookies with Valentine's Day Candy Sprinkles!

Ingredients

  • 1 box of strawberry cake mix
  • 1/3 cup of oil
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon hot pink gel food color (or any color you prefer)
  • Melted white chocolate
  • Conversation Heart Candies, and Heart Shaped Sprinkles

Instructions

  1. In the bowl of an electric mixer, combine cake mix, oil, eggs, vanilla, and food coloring, and mix on medium speed using the paddle attachment, until combined. about 2 minutes.
  2. Using a cookie scoop, place the cookie dough about 2 inches apart, on a baking sheet, that is covered with parchment paper.
  3. Bake for 11-12 minutes, or until edges of cookies has browned a bit.
  4. Remove from oven, and let cookies cool a bit, then transfer cookies to a wire rack to cool completely.
  5. Use melted chocolate to use as edible glue, to adhere the Conversation Heart Candies, and other sprinkles onto cookies.
  6. Serve to your lovies, on Valentine's Day!
