Super Easy Slow Cooker Teriyaki Meatballs and Rice

It is cold and rainy today, and that means, that it is the perfect day, to bring out the slow cooker. The wonderful thing about this recipe, is that it will become an instant family favorite, any time of year.

This recipe can be made on any weeknight, and is very easy! It was ready, in my slow cooker in 2 hours on high. So I just placed everything in, and let it go. I had time to do laundry, answer emails, and plant some ornamental Kale in my garden. And any recipe, that is a time saver, is a winner in my book. Especially my weekly recipe book. 😉

You just need some store bought fully cooked frozen meatballs, and a few more ingredients that are usually pantry staples in my kitchen.
This delicious recipe for Super Easy Teriyaki Meatballs and Rice, will be served over my ultimate pantry staple, Minute® Rice. I love that there are three varieties of Minute Rice to choose from for this recipe, including Whole Grain Brown Rice, White Rice, and Multi-Grain Medley. Any choice of these three, would be a perfect foundation for this delicious meal.

For this recipe, I will be using Minute White Rice, because it is so tasty, fluffy, and ready in just 5 minutes! And the great thing is that both Minute Brown, and White Rice are gluten free, and non GMO, and makes any meal a wholesome family meal, any time of the week.

Now, what makes this teriyaki sauce complete, is the addition of Dole® Pineapples, that are so delicious, and they are naturally fat free, cholesterol free, very low in sodium, and rich in Vitamin C! And I always have a can or two on hand, because Dole Canned Pineapples, are sweet and tangy, and can be used in all kinds of dishes, from salads to desserts. In this recipe I am using Dole Pineapples Canned Chunks. I have used Dole Pineapple Canned Slices on my Crisp Holiday Ham, as you can see below. It is a showstopper in our house.

The next ingredients for this quick and easy meal, is Kikkoman® Naturally Brewed Soy Sauce, that brings out the “umami” flavors, and Kikkoman Teriyaki Baste and Glaze Sauce, that makes anything taste good! All I did extra, was add in some veggies like fresh French green beans. and let it cook for a few hours in my slow cooker.

I found everything I needed to make this meal at my local Ralphs Grocery Store. I have Ralphs right down the street from me, so it is super convenient!  The aroma that fills the house, will bring everyone to the table fast!!!

I start by making my sauce in a medium sized measuring cup, by adding Kikkoman Teriyaki Baste & Glaze sauce, along with Kikkoman soy sauce, drained pineapples, and some of the 100% pineapple juice, that the Dole Pineapples are canned in. Once it is all mixed, just set aside for now.

I then place the frozen meatballs, drained pineapple chunks, and green beans in the slow cooker.

Pour the teriyaki mixture on top. Give it a little stir, and let it cook on low for 4-6 hours or high for 2-3 hours.

Serve over Minute White Rice, or any of the Minute Rice Options mentioned above, and garnish with thinly sliced green onion.

Quick and Easy Slow Cooker Teriyaki Meatballs and Rice

Ingredients

  • 1 bag of fully cooked frozen meatballs
  • 2 cup of roughly chopped French green beans
  • 2 cups of Dole Pineapple Chunks, drained with juice from 20 oz. can reserved, and a few pineapple chunks reserved for garnish.
  • 1/3 cup of 100% Dole Pineapple Juice reserved from can of Pineapple chunks
  • 1 whole bottle of Kikkoman Teriyaki Baste & Glaze Sauce
  • 1/2 cup of Kikkoman Traditionally Brewed Soy Sauce (Lower Sodium works as well.)
  • 6 cups of cooked Minute White Rice, cooked according to package directions.
  • 1 tablespoon of thinly sliced green onion for garnish

Instructions

  1. In a medium sized measuring cup, combine together 1/3 cup of Dole Pineapple juice reserved from can of Dole Pineapples, along with the contents of 1 whole bottle of Kikkoman Teriyaki Baste & Glaze Sauce, and 1/3 cup of Kikkoman Traditionally Brewed Soy Sauce.
  2. Mix well, and set aside.
  3. Place frozen meatballs in slow cooker, along with chopped fresh French green beans, and 2 cups of drained pineapple chunks. Pour Teriyaki mixture, over meatballs in slow cooker, and stir to combine.
  4. Cook on high for 2-3 hours or on low 4-6 hours.
  5. Serve teriyaki meatballs over a serving of Minute White Rice, and garnish with green onion.

*Cook’s Note – This recipe can also be made in the oven as well. Just place the meatballs, pineapple chunks, and green beans, in a 9 x 13 pan, and pour sauce mixture on top, and bake at 350 degrees for 45-50 minutes.
