Meyer Lemon Loaf with Macadamia Nuts

 

Time to use up the lemons. Our Meyer Lemon Tree, has ripened, and I have picked all of these delicious lemons, while it is still baking season. So I figured, that I would make a Meyer Lemon Loaf — But not just any lemon loaf, a Meyer lemon loaf with macadamia nuts! Why macadamia nut? Well, they were on sale, but it works so well, to make a different flavor loaf, that my kids said taste like Fruity pebbles cereal!

Yes! Fruity Pebbles! I took that as a complement, because that means, that it is tasty! This can be a delicious dessert, or a cozy breakfast option. Either way, this recipe, is a keeper! You can of course use regular lemons, if you prefer.

Meyer Lemon Loaf with Macadamia Nuts

I used my new 6 quart KitchenAid Mixer for this recipe, and it works like a charm. I got this gift from my husband for Christmas, so that I have another mixer for our Cakeberry Custom Cake business. I love this recipe because it is pretty simple, and once you mix all of the ingredients in the mixer, you can just fold in the macadamia nuts, and pour into a prepared loaf pan, and bake. Or you can omit the nuts all together, if you wish. Super simple, and super delicious! You probably have all of the basics for this recipe in your kitchen already.

So when unexpected visitors, say they they will be stopping by, now you have a delicious recipe to serve with a hot cup of tea. Coffee is good, but tea goes with this Meyer lemon loaf with macadamia nuts, much better. Enjoy!

 

Meyer Lemon Loaf with Macadamia Nuts

Ingredients

  • Lemon Loaf:
  • 1-1/2 cups all purpose flour
  • 1 cup of granulated sugar
  • 1/2 cup of milk
  • 1/2 cup of chopped macadamia nuts
  • 1/3 cup softened butter
  • 2 eggs
  • 2 tablespoons Meyer lemon juice
  • Meyer lemon zest from 1 lemon
  • 1/2 teaspoon salt
  • Lemon Glaze:
  • 1 cup of confectioners sugar
  • 1-2 tablespoons of Meyer Lemon juice

Instructions

  1. Preheat oven to 350 degrees.
  2. In the bowl of an electric mixer, combine butter and sugar, until smooth. Add in eggs, Meyer lemon juice, zest of a Meyer lemon, and milk. Continue mixing until combined.
  3. Add in flour, salt, and baking powder, and mix for a few minutes until everything is combined. Stop mixer, and gently fold in macadamia nuts with a spoon.
  4. Pour batter into a loaf pan, and sprinkle a few extra macadamia nuts on top. Bake for 1 hour, of until a toothpick comes out clean when inserted in the center.
  5. Allow loaf to cool in pan for 1 hour, then remove loaf from pan, and transfer to a wire rack to cool completely. Prepare glaze, by placing 1 cup of confectioners sugar in a small bowl, and add in lemon juice, and stir until desired thickness for smooth drizzling , and drizzle on top of loaf. Allow glaze to set dry, before serving.
