I am all about ringing in the new year with a bit of luck. 2016, has been very good to me and my family in many ways, and I am very thankful for that. It has been quite a holiday season, and I must admit, that with all the cooking, shopping, wrapping, and decorating, I am glad that it is almost a new year! New starts, new opportunities, new resolutions, and goals to accomplish for 2017. I can’t wait!

 

But first, we need to celebrate this fabulous new year in style! I made this delicious New Years Black Eye Pea Dip, that can be served, or should I say SHOULD be served, on either New Year’s Eve, or New Year’s Day. Since eating Black Eye Peas represents, coins, and therefore, money, and prosperity, for the new year, I will personally serve this on New Year’s Day, but party-goers, at a New Year’s Eve bash, would love to take this down in a flash! Hey, that kinda rhymed!

This New Years Black Eye Pea Dip, comes together so fast, and most of the ingredients, I already had in my pantry. If you are a fan of hummus, you will be a fan of this New Years Black Eye Pea Dip. I should note, that you can also make this ahead of time, by pureeing the black eye peas, and storing them in the freezer, like I did with other canned beans, and veggies, when I showed you how I puree vegetables for Hidden Vegetable Recipes.

 

Just thaw it out the night before you serve, by placing it in the fridge, or you can thaw it out by placing the frozen bag of puree, in a large bowl of water to thaw for about an hour or so. Either way, you are good to go! Serve this with your favorite chips, and/or sliced veggies, and it will steal the show!

New Years Black Eye Pea Dip

Ingredients

  • 2 cans black eye peas, drained
  • 1 tablespoon of lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon garlic powder
  • 2 tablespoons chopped tomato
  • 1 tablespoon thinly sliced green onion

Instructions

  1. Place drained black eye peas, in a food processor, along with lemon juice, salt, pepper, garlic powder, and purée until smooth.
  2. Place in a bowl, and sprinkle on chopped tomato, and sliced green onion. Garnish with parsley, and serve with chips.
