I have so much Pumpkin Puree, that i made a few weeks ago, that I need to use up, and so, since it is the perfect time of year to make soup, I opted for a delicious bowl of Pumpkin Parmesan Soup with Bacon Bits and Croutons!

I love soup. I could eat soup all summer long, so when fall comes around, I am a happy camper! I can finally make soup, without the 100 degree southern California weather! It is getting brisk outside, and Pumpkin Parmesan Soup, sounds perfect! Especially with bacon. Actually everything is better with bacon.

This recipe is SOUPer simple, and comes together in a snap! Just render off a few slices of bacon, until crispy, and set aside. Then, you start off with a few tablespoons of butter, and onion, in a saucepan, and cook until tender, and translucent, then add chicken stock, pumpkin puree, evaporated milk, parmesan cheese, garlic powder, salt, and pepper. Let it come to a slow simmer on medium heat, and cook for about 7-10 minutes.

When it is all warmed up, just ladle into a bowl, and top with a few bacon crumbles that you rendered earlier, and some croutons! Soups on!

Pumpkin Parmesan Soup With Bacon and Croutons

Ingredients

  • 2 cups low sodium chicken broth
  • 2 and 1/2 cups pure pumpkin purée
  • 1/4 cup chopped onion
  • 1/4 cup finely grated Parmesan cheese
  • 1 can of evaporated milk
  • 2 tablespoons butter
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 4 slices of bacon, cooked, and crumbled into bits
  • Herbed croutons for topping

Instructions

  1. In a deep saucepan, add butter to melt on medium heat.
  2. Add in chopped onion, and cook until translucent, about 3 minutes.
  3. Pour in chicken broth, and pumpkin purée.
  4. Stir to combine, and add in evaporated milk.
  5. Add in 1/4 cup of Parmesan cheese.
  6. Stir to combine.
  7. Add in salt, pepper, and garlic powder.
  8. Stir well, and let simmer while stirring occasionally for 10 minutes.
  9. Serve hot, in bowls, and top with croutons and crumbled bacon.
  10. Makes 6-8 servings
