With Pumpkin season in full swing, I wanted to share some ways to use Pumpkin. Last week, I showed you how I make my own pumpkin puree for recipes, but today, I am sharing how to roast the seeds of said pumpkin, with this Italian Style Roasted Pumpkin Seeds.

I love roasted pumpkin seeds, any way, I can get ’em, but usually, they are pretty plain, yet still yummy. I always have a lot of different spices in my pantry, but I did not want to make anything to spicy, for my kiddos, so I opted for Italian style seasoning, because, it is a sure winner in our home. This did not disappoint! The kids loved them. They ate them while watching the season premier of The Walking Dead!

If my kids were younger, I would not feel that The Walking Dead would be appropriate, but since my kids are 19 and 16, I couldn’t stop them. We are die hard fans. I wanted to go to the premier live, which was held at the Hollywood Forever Cemetery, but my husband said “No Way!

He would never go to a cemetery at night. I wonder why? 😛

So, we stood in, and good thing, because it started raining! Like Hard Rain! It never rains in L.A., so that was odd, and unusual, but fitting for this season premier. And These Italian Style Pumpkin Seeds, really stole the show. Well, up until Glenn Rhee died in the show, anyway. These Pumpkin seeds are so easy to customize, and you can add any kind of spice mixture really, and I’m sure they will turn out great, but Italian style, is fantastic!

The messy part, is picking out the seeds, and making sure there is no pumpkin guts on them. I did this by picking them out one by one, and placing them in a measuring cup with water. Then I rinsed them well in a fine mesh colander, to rinse off any sliminess, and any remaining debris. Then I turned them on a bunch of laid out paper towels, and used another paper towel to pat them dry a bit.

I then added them to a bowl, that had the seasoning mixture. I just used what I had on hand, which was dried basil, oregano, garlic powder and Parmesan cheese. Roasted with some butter, and that’s it! Nothing to it! So delicious!

Italian Style Roasted Pumpkin Seeds

Ingredients

  • 1/2 cup pumpkin seeds
  • 1 tablespoon melted butter
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 cup grated parmesan cheese

Instructions

  1. Pre-heat oven to 350 degrees.
  2. Once you have scooped out all of the guts, and seeds, out of a pumpkin, pick the seeds out only, and place in a bowl, or cup of water.
  3. This is a messy job.
  4. Once seeds are in cup, place in a colander, or strainer, and pick of any remaining debris, that may still be clinging to seeds.
  5. Then place seeds on a clean kitchen towel, or paper towels, and gently pat dry a bit.
  6. In another bowl, place melted butter, garlic powder, basil, oregano, salt, and Parmesan, and stir to combine.
  7. Place seeds in with Italian mixture, and stir to coat all seeds with mixture.
  8. Place seeds on a parchment paper covered baking sheet, and roast for 15-20 minutes, until seeds are crispy.
