Sauteed Asparagus and Bacon

 

I love quick and easy side dishes, that are also low carb! Something that comes together in a flash with only three ingredients, that makes a delicious side dish, when you cannot think of one that pleases the whole family. Everyone loves bacon, and when you make it with asparagus, you might even get your picky eaters to actually enjoy vegetables, that they might have never liked before, or never wanted to try.

I went to Disneyland so many times, and they have a food stand called Bengal Barbecue, that is right near the Indiana Jones ride. They serve Bacon Wrapped Asparagus on skewers, and they are not to be passed by. It is one of my family’s must have threat when we get there, and this simple and easy side dish has those flavors, and remind me of our many wonderful days at Disneyland, every time I make it.

Sauteed Asparagus and Bacon

When you make something like Roasted Chicken, or Pot Roast, or Roast beef, Steak, RibsSeafood, anything! This dish complements so many meals, and no one will turn it down. All you need is bacon, asparagus, and lemon. The things that are normally in your pantry, that you use with this, is salt and pepper. And that it! You now have a side dish that will disappear before your eyes.

There are some times that I add in either garlic powder the same time that I am adding salt and pepper, but it does not even need it really, but you can experiment to find your own flavor with this dish as well. That is the beauty of it. You can add more vegetables, like zucchini, onion, carrots, broccoli, snap peas, etc.

Maybe even a splash of hot sauce at the end to give it a kick! Try this and you will see how customizable it is. But I like it just the way it is. Easy, fast, and Disney style delicious!

Sauteed Asparagus and Bacon

Ingredients

  • 6 slices of bacon
  • 1 pound of asparagus (ends cut off)
  • Salt and black pepper
  • Lemon juice from half a lemon

Instructions

  1. Cook bacon in non-stick or cast iron skillet until bacon is crisp, about 2-3 minutes per side. Remove bacon from pan, and place on a paper towel lined plate, and set aside. In the same pan with the remaining bacon grease left in pan, add in chopped asparagus and cook until tender/crisp, about 5-6 minutes. Meanwhile chop up bacon into large pieces, and place the bacon pieces back into pan with asparagus. Mix thoroughly, and sprinkle with salt and pepper to taste. Remove bacon and asparagus with a slotted spoon to a bowl, and squeeze fresh lemon juice over top, and serve.
