It is Pumpkin season, and, I have been trying to change things up a bit in my kitchen. I have been decorating for fall, even though the weather outside, still feels like summer. As I am writing this, it is 104 degrees outside! It is almost October, how can this be? Even though it feels like summer, I am determined to ring in the fall, with some delicious Pumpkin recipes, and that is why I started with these yummy Pumpkin Whoopie Pies with Cream Cheese Frosting!

Pumpkin Whoopie Pies with Cream Cheese Frosting!

My husband, is usually not a fan of pumpkin, or cream cheese, but I have to admit, that he totally devoured these Pumpkin Whoopie Pies, and he told me, that they were super delicious, and he couln not stop eating them! The kids loved them too, but I expected that already.

These Pumpkin Whoopie Pies with Cream Cheese Frosting, are so easy to make, because they start with a box cake mix. I used butter vanilla flavor box mix, and all I added was a can of pure pumpkin, and some pumpkin pie spice, along with butter instead of oil. No eggs, or water, is needed, to make these little yummy treats, that are perfect for fall.

And when you frost the middle with Cream Cheese Frosting, they will knock your socks off! I love Cream Cheese added to anything, and the frosting comes together in a snap as well. Just a block of cream cheese, butter, powdered sugar, and vanilla extract, and we are in business! I was able to get about 3 dozen of these baked, which made about 18 whoopie pies, and then I stood aside, and the herd just took them down!

Turning a box mix, into a whoopie pie, is super simple. I mixed the ingredients in my mixer, and used my handy dandy cookie dough scoop to get tablespoon full sized balls, onto some parchment paper covered baking sheets, and baked for about 15-16 minutes.

I then let them cool on a cooling rack, and piped some cream cheese frosting on them using my favorite 1M tip, fitted into a Wilton piping bag, and they looked super cute!

I think im going to serve these at my Halloween Party, and watch all the kids go crazy for them. But I have a feeling, that adults will be fighting over them too, so I think a double batch will do. Try these, and you will see how good they are, and super simple too!

Pumpkin Whoopie Pies with Cream Cheese Frosting

Ingredients

  • 1 box butter vanilla cake
  • 1 15 oz can of pure pumpkin
  • 1/3 cup of softened butter
  • 1/2 teaspoon pumpkin pie spice
  • Cream cheese frosting
  • 8 oz cream cheese
  • 1/2 cup butter
  • 3 cups powdered sugar (sifted)
  • 1 tablespoon vanilla extract

Instructions

  1. Whoopie pie instructions:
  2. In the bowl of an electric mixer, combine cake mix, softened butter, pure pumpkin, and pumpkin pie spice, and mix for 2 minutes on medium speed until well combined. Scoop out about a tablespoon for each cookie onto a parchment paper covered baking sheet. I was able to get about 3 dozen cookies. Bake in oven for 15-17 minutes. Remove baking sheet from oven, and let cool for 1 minute, then place cookies on a cooling rack, and let cool completely before frosting with cream cheese frosting.
  3. Cream Cheese Frosting Instructions:
  4. In the bowl of an electric mixer, cream together the butter and cream cheese until combined. Add in vanilla extract, and mix again until combined. Add in powdered sugar a little at a time, until desired results.
