Peaches & Cream Oatmeal Bars - A Summer Treat!

 

This summer is going to be a summer of peaches; I can tell! The peaches that I am finding at the farmers markets these days are gorgeous! They are so sweet, and picked at perfection, and I can’t get enough of them. I admit that I may have bought too many. Now I find myself making peach this, and peach that. But it tastes soooo goooood! I can’t help myself!

Peaches and Cream Oatmeal Bars

I wanted something for breakfast, that was kinda sweet, but not just a bowl of cereal. Although, I love myself some Fruity Pebbles, I felt like baking something. This did not take too long, and you can have it any time of the day, and it will be the right time of the day.  Baking these Peaches and Cream Oatmeal Bars on my antique Wedgewood stove, makes me feel like I am transported back to the 1950’s in a charming farmhouse. I can just imagine eating one of these bars, while sitting on a porch swing, with a glass of sweet peach tea! In truth I was baking in Southern California, with the sounds of traffic outside.

I baked this in my 8 inch baking dish by Anchor, and I just love that it is see through! It looks so cool, and cooks so beautifully. I have the whole set of these, as well as so many other baking dishes. I am thinking of making a garage sale, to sell some kitchen wares that I have acquired over the many years of my baking/cooking habit, but I just cannot bring myself to get rid of anything.

When it comes to baking dishes, cast iron pans, crystals, and signed cookbooks, I am a hoarder! I have so many signed cookbooks from signings, that I am not sure where to store them all! I love cookbooks, because I find so much inspiration for recipes in them. These days, I am always on the lookout for Peach recipes. Whenever I visit my local farmers market, I always buy some fresh fruits and vegetables, before checking out the booth where I buy crystals and jewelry. The fruit are always fresh and delicious looking, and you cannot pass them up. The beauty of this recipe, is that you can use almost any fruit in place of peaches, and boom! You have a whole new fruit bar!

Peaches and Cream Oatmeal Bars

Ingredients

  • 1 cup all purpose flour
  • 1 cup oatmeal
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • Dash of salt
  • 1/2 cup butter, softened
  • 3 tablespoons granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1/2 teaspoon vanilla
  • 1 cup peeled, chopped peaches
  • peach slices for the top
  • Glaze:
  • 1/2 cup confectioners sugar
  • 2 teaspoons milk

Instructions

  1. To prepare glaze:
  2. In a small bowl add confectioners sugar, and milk,and mix with a fork until smooth.
  3. Directions:
  4. In a large bowl, add flour, oatmeal, baking powder, cinnamon, and salt. Set bowl aside. Meanwhile in the bowl of an electric mixer, combine softened butter, and sugars until combined. Add in egg and vanilla, and mix until combined. Then add in bowl of dry ingredients, and mix to combine. fold in chopped peaches until thoroughly incorporated. Spread batter evenly into prepared 8x8 baking pan. Arrange peach slices evenly on top of batter. Bake for 30 minutes until bars are browned on top and a toothpick inserted in the center comes out clean. Allow bars to cool, and cut into 9 squares. Drizzle with glaze. Store in refrigerator.
