Garlic Butter Shrimp and Avocado Crostini – #CookoutWeek

I have been loving all of these link-ups that are participating in #CookoutWeek. They all look so amazing, and so much fun for the summer. My recipe for Garlic Shrimp and Avocado Crostini, will knock your socks off, and is so simple to make.
If you are having a cook out, or family gathering, these are perfect summertime appetizers! For this recipe, I used II Boschetto Rosemary Infused Extra Virgin Olive Oil that I received from The French Farm. If you are not familiar with The French Farm, they have delicious, and very high quality imported foods, from Europe, that can be shipped right to your door!

The aroma that comes from this Rosemary Infused Olive Oil, just makes this dish even more delicious, because of the rich flavor that it gives to the Crostini. This olive oil, really heightens the flavor of any dish.

I start this appetizer, by placing shrimp on a Blackstone Griddle like the one that I have, and use so often, or you can use a skillet, frying pan, grill, or grill pan, if you prefer. Whichever method is fine. Then you add a few tablespoons of better, and some minced garlic. Season with salt and pepper, and cook them until they turn pink.

I then Placed the a few tablespoons of the II Boschetto Rosemary Infused Extra Virgin Olive Oil from The French Farm, on the griddle, and toasted the baguette slices, until a bit browned. Not too much though, because I didn’t want to burn them. Once they were done, I just slathered on a bit of smashed avocado, and topped it with a shrimp, and garnished with green onion.

These were a smashing hit, and they went in a flash! For those summer house parties, gatherings, and get-togethers, these will steal the show!

 

Garlic Butter Shrimp and Avocado Crostini

Ingredients

  • 12 large shrimp, clean and detained with tails off.
  • 2 tablespoons butter
  • 1 minced garlic clove
  • A French baguette cut into 12 1 inch rounds
  • 2 tablespoons Rosemary infused olive oil
  • Or regular olive oil.
  • 2 large avocado
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Green onion to garnish

Instructions

  1. Begin by mashing the avocado in a small bowl, and season with salt and pepper, and lemon juice. Mix to combine, cover, and let chill in fridge.
  2. On a Hibachi griddle, or frying pan, on medium high heat, place shrimps, butter, and minced garlic, and cook shrimp until they turn pink.
  3. About 2 minutes.
  4. Season with salt and pepper, and set aside.
  5. On the hibachi griddle or pan, heat olive oil, and place crostini rounds on griddle, and let brown and toast, about 30 seconds per side.
  6. Check to make sure they don't burn.
  7. Remove crostini from griddle, and arrange on a platter.
  8. Spread about 1 heaping teaspoon on each crostini, and top with one shrimp.
  9. Garnish with green onion, and a splash of lemon juice if desired.
