Summer is here, and we are always chilling outside these days.

It is so beautiful out here, and family and friends are always stopping by.

I have been entertaining a lot, and at the same time, I am trying to stay on track by making better food choices.

Cream Cheese Veggie Dip

With grilling season in full swing, I find it very challenging to stay on track, especially at summer get-togethers,
because of all of the delicious appetizers that call to me, and speak my name.
I get so hungry, and I just want to try everything! Do you get like that at cookouts, or gatherings?
Yeah! Me too!  so when I am entertaining at home, I like to keep things on the lighter side.
If you are going to veg out, with veggies, then this is the way to go!

Staying on track with my healthy eating plan, is really challenging sometimes.
Especially with all the temptations that come with grilling season, but with this dish,
it’s a no-brainier. You can eat, without guilt, and that to me, makes cookouts much more fun!
I whipped up a fast and easy cream cheese dip and served it with a crudité platter,
that everyone loved! This was a perfect appetizer, and I had no guilt enjoying something so good!
This dip, that uses Weight Watchers Reduced Fat Cream Cheese Spread, is truly the star of the show,
because the flavor is so light and creamy, yet it is reduced fat! Win-Win! I used it to make a
veggie dip with minced bell peppers, fresh chopped spinach, and some seasoning, and we
got ourselves a delicious start to our meal!

I bought everything I needed for this awesome dish at Ralphs Grocery Store.
In the cheese isle is where you will find Weight Watchers Whipped Cream Cheese.
This cheese is real and all natural, light and fluffy, reduced fat, and tastes truly out of this world good!
I almost ate it all right out of the tub, but I jazzed it up by placing it in my stand mixer with some
finely diced bell peppers, fresh chopped spinach,  green onion, and some seasonings.
I then piled it high in a serving dish, with a crudite of vegetables for dipping! Super simple, and ready for hungry people!

When I made this Cream Cheese Veggie Dip, and took it out on the patio, it was gone before I knew it!
Everyone was dipping in it while I was trying to shoot it! Can you see the chunk missing below?

Yeah that was my son’s friend attacking it! I did not do that, I swear! No,
they couldn’t stay away. And you won’t be able to either. But you will be able to stay on track and not feel guilty.
You will still feel like you indulged, yet you know you are eating right.
That’s the beauty of using Weight Watchers Reduced Fat Whipped Cream Cheese Spread in this dish.
I am a big fan of Weight Watchers, and I have been for years, and years. I even have a subscription to their magazine.
I love all of the delicious recipes in there, that help you stay on track.
 
Cream Cheese Vegetable Dip

Ingredients

  • 2 - 8oz packages of Weight Watchers Reduced Fat Cream Cheese Spread (Softened)
  • 1/3 cup chopped fresh spinach
  • 1/4 cup each finely diced red and green bell peppers
  • 3 tablespoons finely diced green onion
  • 1/2 tablespoon garlic powder
  • 1/4 tablespoon salt
  • pinch of black pepper
  • Assorted vegetables for dipping

Instructions

  1. Place softened cream cheese in the bowl of an electric mixer, and add salt, pepper, garlic powder, and mix on low to combine for about a minute, until smooth. Add diced bell peppers,spinach, and green onion, and mix just to combine. Serve in a bowl, with desired vegetables for dipping. Serve immediately, and refrigerate any leftovers.

You can serve this dip with almost any kind of vegetable for dipping.
I used endive, cherry tomatoes, broccoli, cauliflower, carrots, and crackers, but with this dip,
