Pepperoni Chicken Dinner

 

 

My husband loves pepperoni pizza. He has not met a pizza he didn’t like. Whenever we are passing by a pizza place, he says that he must try it some day. He was raised on that stuff. But I have been serving him nothing but low carb foods, so that he can keep his sugar under control. So no pizza for him. That is when I decided that Pepperoni Chicken Dinner, was the way to go for him!

 

He was amazed, because the flavor was so good, with the Italian spices that were added to the chicken, and he loved every bite. He says, he got his Italian food back. I also make him Low Carb Pizza, whenever he is in the mood for a quick snack, but this is a dinner that everyone will love. Especially when you pair it with a simple salad, and some pasta!

I opted not to use marinara sauce with this dish, but you can add it at the same time you add the cheese and pepperoni if you like. I just love the flavor of chicken, cheese and pepperoni, without all the sauce. However, I might try this with a pesto sauce one day, because I can’t get enough of that stuff! I like my cheese a little browned, because I just love the crispiness of it. And the flavors will win over a picky eater in the house.

I am not a picky eater. But the hubs and the kids are. It can be quite the challenge trying to find what they like, but this dinner gets cheers from them all. And that is one less stressful day, because I don’t know about you, but when I cant find a dinner that pleases everybody, I get stressed, and we just end up getting takeout, and I try very hard to stay away from that, and cook every meal at home. So this really is a winner, winner, chicken diner!

 

Pepperoni Chicken Dinner

Ingredients

  • 4 Chicken breasts
  • 4 Teaspoons Italian seasoning, divided
  • 1 Tablespoon olive oil
  • 1 Cup mozzarella cheese, divided
  • 8 Slices pepperoni
  • Parmesan cheese for sprinkling
  • Salt and pepper to taste

Instructions

  1. Pre-heat oven to 400 degrees. Begin by pounding chicken breasts to 1/2 thickness. I do this by placing each of them in a re-sealable bag, and pounding them with a meat mallet. Then season the chicken breasts with salt and pepper, and a teaspoon of Italian seasoning for each breast of chicken.Heat the olive oil over medium-high heat in a large non-stick frying pan, and add chicken to cook for about 2-3 minutes per side. They will still be under cooked. Remove chicken from pan, and place in a baking dish, and bake for 15 minutes. Remove baking dish from oven, and prinkle each chicken breast with 1/4 cup of mozzarella cheese, and top with pepperoni. Place baking dish back in oven, and bake for another 30 minutes.
