Korean Beef

This week has been hectic! Finding shoes that fit, and party dresses can be exhausting! My daughter has a particular taste when it comes to gowns, and it has to look perfect, and be her precise style. And while that is great and all, it really can be a challenge to find an affordable beautiful gown. She found some gowns by Elie Saab that she likes. Yeah well get in line! Get me one too!

And on day’s like this, I need to get dinner going, because everyone comes home starving, and moody, and the only thing that will make ’em happy, is food fast! And not fast food either. So that is where Korean beef comes in. It is so delicious, that it tastes like it took a lot longer to cook. When I call in the troops to eat, they are so relieved that they do not have to wait long for food. All you will get is compliments on flavor, because it is Korean style fast food at home!

The sauce that is poured into the beef, can really be poured on anything! the smell is so yummy, that I feel like drinking it. It can be a dipping sauce for pot stickers or egg rolls for sure! This sauce mixed into rice alone would be fantastic. And instead of serving with rice, you can serve with mock cauliflower rice, or just pile the meat mixture into lettuce leaves for a lower carb meal. My kids like to pile it on buns like a Korean style sloppy joe of sorts. Any way you want it is fine by me. Just try it, and you’ll see

Just brown the ground beef, and while that is doing it’s thing, you can mix together the sauce ingredients. At this point, my rice is almost done, and side veggies have been steamed. When the meat is browned and crumbly, just add the sauce, and let it reduce and its ready.

Korean Beef

Ingredients

  • 1 pound lean ground beef
  • ? cup brown sugar
  • ¼ cup soy sauce
  • 3 cloves garlic, minced
  • ¼ teaspoon ground ginger
  • ½ teaspoon crushed red pepper flakes
  • 1 bunch green onions, thinly sliced

Instructions

  1. In a medium measuring cup, add soy sauce, brown sugar, garlic, ginger, and red pepper flakes. Stir to combine, and set aside. Meanwhile, in a large non-stick skillet, on medium heat, brown ground beef, until no longer pink, and it is crumbly. Drain some of the fat that has redered, and pour in soy sauce mixture. Cook until sauce has reduced a bit. About five minutes. Serve over rice, and garnish with sliced green onion.
