My husband is a diabetic. So finding meals that the whole family will love, while staying low carb, is a challenge. That is where these delicious Sausage Pizza Zucchini Boats comes in. These are so yummy, and the zucchini becomes juicy and a little sweet when baked, so that you wont miss pasta at all! Sausage Pizza Zucchini Boats

The great thing about these boats, is that you can use what you have in the pantry. I used Italian sausage, that I cut out of the casings. I had extra Italian sausage links, from a meal I made the day before, and I had everything else already in the fridge.

I used a cheddar mixture of shredded cheese because that is what I had in the fridge, that needed to be used up soon, and it worked perfect, but you can use almost any shredded cheese. Actually, you can use this zucchini vessel, for almost any kind of meal!

Here are a few examples of what you can make.

Philly Cheesesteak:

Thin sliced steak, browned with chopped onion, and bell pepper, Worcestershire sauce, and sliced provolone.

 

Mexican Taco:

 

Ground beef, taco seasoning, shredded cheddar, baked and topped with lettuce, chopped tomato, and a bit of sour cream.

 

Pepperoni Pizza:

 

Pizza sauce, pepperoni slices, and mozzarella cheese.

Sausage Pizza Zucchini Boats

Ingredients

  • 2 large zucchini
  • 1 tablespoon olive oil
  • 1/2 pound ground Italian sausage
  • 1/3 cup chopped onion
  • 1/2 cup pizza sauce
  • 1 cup shredded cheese

Instructions

  1. Preheat oven to 350 degrees. In a medium saucepan, add olive oil, and cook chopped onion until fragrant and translucent, about 2 minutes. Add in ground sausage, and cook until brown. Add in pizza sauce, and stir to combine. Simmer and cook for ten minutes. Meanwhile, slice zucchini in half lengthwise, and use a teaspoon to slowly scrape out the center, until you have a boat shape that is about 1/4 inch thick. Place zucchini halves in an 8x8 baking dish, and add sausage mixture, and add 1/4 cup of shredded cheese to the top of each zucchini boat. Bake for about 25-30 until zucchini is tender-crisp. Remove promptly, and top with more cheese if desired.
