OK I am gonna say it, and I don’t care what anybody thinks – I love finger food! There, I feel better. I love foods that you can just pick up, eat, and go. Salads are a good way to use up whatever veggies you have in the fridge, and I had a lot of tortillas as well. My kids love Tuna, and so before my teenagers came home, I made some super easy Tuna Salad Pinwheels to surprise them!

I had celery, spinach, and avocado just hanging in the fridge, as well as lettuce and tomato. I always have lettuce and tomato on hand for salads and sandwiches, but I had extra spinach that I wanted to use before I threw it out. I am growing spinach, but for some reason, not too successfully. My vegetables in my garden are just not getting big as I would like. Even though I fertilize them regularly, I guess it just takes time.

Spinach and avocado, are a few of my favorite vegetables, and they are not only good for you, but they are so delicious. Especially in a salad, where the flavors truly shine together. These pinwheels are so much fun, and the kids will just love em’. These Tuna Salad Pinwheels are not only a fabulous lunch for the family,but they are also a great appetizer for any parties and gatherings.

Ingredients

  • 2-5oz cans chunk light tuna, drained
  • 1 cup shredded lettuce
  • 1/2 cup julienne cut spinach
  • 1 small roma tomato seeded and diced
  • 1/2 avocado diced
  • 1 celery stalk finely diced
  • 3 tablespoons mayonaisse
  • 1 tablespoon meyer lemon juice
  • Salt and pepper to taste

Instructions

  1. Add everything except the Tortillas, in a large bowl, and combine.
  2. Spread about 3 heaping tablespoons of salad mixture evenly on each Tortilla.
  3. Roll each tortilla into a log, and slice each into about 1 to 1-1/2 inch pieces.
  4. Place each pinwheel on a plate, and secure with a toothpick.

And the best part, is that you can use many vegetables that you have on hand, and you can also substitute shredded chicken or canned salmon for tuna, or you can leave out the protein all together, and just have veggie pinwheels! The possibilities are endless really. And I just love recipes with so many options, because you can look in your pantry, and just add what you have on hand.

The Tuna Salad Pinwheels are light, perfect for a quick lunch and are complemented with the delicious flavor of Meyer Lemons that I picked right off my Meyer Lemon tree outside.
