I just love Prime Rib. It is an indulgence that I am always truly grateful. Especially when Prime Rib is on sale. You can make a delicious Garlic Herb Prime Rib, for four people, with a 3.5 pound roast, and still have leftovers. And when you have a sale going on, it can be pretty affordable as well. Pair this with a side dish of Roasted Veggies, and a side of Mashed Potatoes and you’ve got yourself a pretty fancy shmancy dinner!

The rub on this Garlic Herb Prime Rib, is so simple, and I just love the fragrance of fresh Thyme and Rosemary. It adds just the right amount sophistication to any meal. When the aroma of prime rib that is roasting, goes through the house, you kind of get intoxicated with the thoughts of taking a delicious bite! “wow, that smells good!” These were the words of my husband, who just walked through the door.

To get this roast at the perfect medium that I love, I let it roast for 65 minutes at 350 degrees, after letting it brown at 450 for 10 minutes. It came out tender, and juicy, and my teenage son could not get enough. He said we should make this every week! Now I don’t know about that. But we can always dream. Today is Good Friday, and while I will be fasting until sundown, I will be dreaming of this delicious meal. I can’t wait until we have this again, and I think I am getting better at roasting it each time.

Garlic and Herb Prime Rib Roast

Ingredients

  • 3.5 pound Bone-in Prime Rib Roast
  • 2 tablespoons olive oil
  • 1 minced garlic clove
  • 1 tablespoon fresh chopped thyme
  • 1 tablespoon fresh chopped rosemary
  • 2 teaspoons salt

Instructions

  1. Preheat oven to 450 degrees. In a small bowl, add olive oil, minced garlic, salt, pepper, thyme, and rosemary. Combine mixture, and rub all over prime rib. Place roast in a roasting pan on a wire roasting rack. Place in oven, and let sear for 10 minutes, then lower oven heat to 350, and let it roast for another 60-65 minutes or until desired doneness.

Another secret, is using really good quality Olive Oil. It really makes a difference in your cooking, and adds such a great flavor. I did check it often, because I wanted to make sure not to burn it this time. And it was delicious at this medium temperature of 140. For me, it was the perfect amount of doneness.
