I am the ultimate morning person. I love to wake up early, and start my day, and I am being very honest when I say, that, I just simply cannot function properly without a cup of coffee! My daily routine can be a little different each morning, because sometimes, I answer emails right away, and sometimes, I go right into the garden. Other days, I’m working on a idea for a Custom Cake.

The one thing that stays constant, is my morning cup of coffee, and a light breakfast, like my Banana Honey Oat Muffins, which I will tell you more about in a minute. I love waking up and getting my coffee ready, because the aroma just gently wakes me, and let’s me know that a steaming cup of coffee soon awaits!

International Delight Simply Pure

The only thing I add to my coffee, is International Delights Simply Pure. I really do use International Delight everyday. I love that it is made with only 5 simple ingredients, including real milk, sugar, and cream. I found International Delights Simply Pure in the Dairy isle at Walmart.

They come in flavors of Vanilla, Caramel, or Hazelnut. And while I love all three, I chose Vanilla this time, because it is one of my favorite flavors in the morning.  You can find out more about their flavors by visiting their website.

The taste is just the right amount of sweet, and I love having my quite mornings all to myself with my coffee, my laptop, my dog Loki, and a light delicious breakfast. Today I’m having Banana Honey Oat Muffins.

These Banana Oatmeal Honey Muffins are the perfect complement to my coffee, because they are light, and full of banana goodness, and they are the perfect wake me up. See what I did there? I said wake me up instead of pick me up. Clever huh? Yeah.

I love dunking my muffins in my coffee, and when a piece of muffin falls into my coffee cup, it is even better, because I then get to scoop it out with a spoon, and eat it up! Yum!

Making the Banana Honey Oat Muffins:

Step one: Place all ingredients in bowl of an electric mixer, or just a large bowl, and mix on medium until just combined.

Use an Ice Cream scoop to evenly divide mixture into muffin tins. I was able to get 18 exactly with this delicious recipe.

Bake at 350 degrees for 20 minutes, until golden.

Serve warm or cool. It’s all good!!

Banana Honey Oat Muffins

Ingredients

  • 2.5 cups old fashioned oats
  • 1 cup plain low fat greek yogurt
  • 2 eggs
  • 1/2 cup honey
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 2 ripe bananas, mashed

Instructions

  1. 1. Preheat oven to 350 degrees. Spray tin with non-stick cooking spray or line 12 muffin tins with liners.
  2. 2. Place ingredients in the bowl of an electric mixer.
  3. 3. Using the paddle attachment, mix until everything is combined together and smooth.
  4. 4. Divide batter among cupcake liners, and bake for 18-20 minutes, or until toothpick comes out clean.
  5. Let them cool on a wire rack for about 5 minutes. You can serve them warm or cooled. Either way, they are delicious!
