She truly is a good food aficionado, and she is a Beekeeper in her own backyard! How cool is that! Her motto is: Mostly Food…Always Delicious! and with her food, you can truly see that! A little birdie told me that she is a lover of chocolate! (Welcome to the club!:)  And I love her Food Philosophy. So to honor this little lady, and to send some #FoodBloggerLove her way this Valentine’s Day, I made White Chocolate Dipped Strawberry Madeleines, that I hope she loves as much as I do!
White Chocolate Dipped Strawberry Madeleines
These Madeleines are perfect to share with someone special for Valentines Day, and today, I’m sharing them with you! These are not quite a cookie, and not quite a cake, but I consider them small cake bites, and I think they would be perfect stacked in a trifle, but that’s just me. They do not take long too cook. Only like 8-9 minutes. When you press your finger on the bump, and it bounces back, there done. They can burn easily, so be careful not to over-bake.

I was able to get about 2 dozen of these from 1 batch of batter, and I love the red color of these Madeleine Pans, They look perfect for Valentine’s Day!
White Chocolate Dipped Strawberry Madeleines

Ingredients

  • 2 eggs
  • 1/3 cup sugar
  • 1 teaspoon vanilla extract
  • 1 stick melted butter
  • 1/4 teaspoon salt
  • 3 tablespoons strawberry puree
  • 1-1/2 cups white chocolate chips
  • Sprinkles

Instructions

  1. Begin by coating a standard Madeleine pan with non-stick cooking spray, and set aside.
  2. Pre-heat oven to 375 degrees.
  3. in a medium sized bowl, sift in flour, baking powder, and salt. Set aside.
  4. In the bowl of an electric mixer, add eggs, sugar and vanilla, and strawberry puree, and mix until light and fluffy. About 5 minutes.
  5. Add in flour mixture, and melted butter.
  6. Mix to combine.
  7. Spoon about a teaspoon of batter into each Madeleine pan cavity, and bake for about 8 minutes, or until edges are golden brown.
  8. Meanwhile, melt white chocolate chips in a microwave safe bowl for 30 seconds, then stir.
  9. Add chocolate back into microwave at 15 second intervals while stirring in-between, until white chocolate is melted and smooth. Set aside
  10. Remove from oven and let cool in pan for about 5 minutes.
  11. Dip each half of Madeleine into melted chocolate, and lay on a wire rack.
  12. Sprinkle with desired sprinkles, and allow chocolate to set.
