My family loves breakfast. We love eggs. Bacon too. but with everyone’s crazy schedules, we sometimes eat at different times. It’s rare that we eat breakfast together as a family, before the big rush. I treasure those rare times. Listening to what everyone has planned for the day. I try to feed my family a home cooked breakfast whenever I can, because I know that when they all have breakfast, they can concentrate better throughout the day. I know, that when I don’t have breakfast, I really do feel sluggish all day. Even after lunch. I feel tired, and when I am hungry, I get weak and nautious!

So even when I am not hungry, but I know I’ve got to get going, I try to eat something, just so that I don’t get that sudden bout of hunger later. When I go to the market, I always be sure to buy eggs, bacon or sausage, and tortillas, or even low carb tortillas, to have them on hand.
Freezer Meals Breakfast Burritos, are not only filling, but they are so delicious and satisfying. And I love that I can just take an hour on the weekend, and make ten burritos to throw in the freezer, for the next week. Then the kids can just place one in the microwave, and it will be ready in about 3 minutes.

Now, when the ingredients are on sale, then that is just a BONUS because it ends up costing me around 6 bucks for 10 burritos! You see, the tortillas were 99 cents this week, and I had a coupon for 75 cents off! Just 25 cents a pack! And then when I saw the sausage and cheddar cheese on sale, it just made my job a whole lot easier. Eggs have been very expensive these past few months, but last week, they were on sale for 1.99 per dozen, which was a good sale, so with everything totaled up to about 62 cents each burrito! How cool is that!
I have made all kinds of freezer food. I have even made extra batches of Salisbury Steak patties, and freeze the extra patties that we are not eating that evening. If I see a sale on ground beef, I will make an extra pot of meat sauce, and freeze it. If I see that there is a killer sale on chicken breast, I will grill some, slice it, and freeze it. Then just defrost when it is time for fajitas, or a salad! I have even frozen cake, and individually wrapped cupcakes without frosting, as well. Corn muffins are perfect for this, as well as breakfast muffins.

With this recipe, I flash freeze the burritos, before I add them to a freezer bag. All that flash freezing is, is basically freezing the burritos on a baking sheet without anything covering them, so that they quickly get cold, and a thin layer of ice coats them so that they won’t stick together when you add them to the freezer bag. By doing this, then adding them to a freezer bag, you are able to just take out one at a time when you are ready to defrost one or more. If you miss flash freezing, and just add them to a freezer bag, you run the risk of them sticking together in the freezer bag, and it becomes more difficult to try to separate them when trying to remove just one. You might end up tearing off some from another burrito in the process, and having a mess. By flash freezing, the fast coating of ice, creates a barrier, so that there is less risk of them sticking together.

 The possibilities of ingredients are endless. You can do just egg whites for a more healthier approach. You can add spinach to the scrambled eggs. If you don’t want to use sausage, you can use ham, or smoked sausage, bacon, or Canadian bacon, or just leave any meats out if you wish. For me to put these together, it took less than an hour. I’d say more like 30 minutes, and as long as I have the ingredients on hand, and room in the freezer, I will make more. It is so much less stress just knowing that you don’t have to run around on busy days, trying to feed everyone a good breakfast. It’s already there.

Freezer Meals - Breakfast Burritos

Ingredients

  • Ten tortillas
  • Ten eggs, scrambled
  • 1-8 oz bag of cheddar cheese
  • 2-8 oz packages of breakfast sausage

Instructions

  1. Begin by cooking sausage in a large pan on medium heat, and breaking it up into crumbles. Cook until sausage is browned. About 7-8 minutes.
  2. Transfer sausage to a paper towel lined plate, and allow to drain and cool. Set aside.
  3. Lay out ten tortillas, and place one scrambled egg in each tortilla. About 3 tablespoons of scrambled egg each.
  4. Place about 1-1/2 tablespoons of crumbled cooked breakfast sausage on top of scrambled egg in each tortilla.
  5. Sprinkle about 1 tablespoon of cheddar cheese on top of sausage and eggs.
  6. Wrap and fold each tortilla by folding inward the two ends, and roll into a log.
  7. Place folded breakfast burritos on a baking sheet that has been covered with parchment paper, and flash freeze in freezer for about 1-1/2 hours. Place flash frozen burritos into a zip too freezer bag, and place in freezer.
  8. To defrost, place frozen burrito on a microwave safe plate and microwave for 1-1/2 minutes on each side.

Other breakfast ideas that I love, are these delicious CRANBERRY BREAKFAST MUFFINS, that are great on the go. I love the idea of making these muffins, and freezing them individually. Then you just allow them to defrost for about 30 minutes, and BAM! Muffin time!

And this Potato and Egg Scramble, is always a good idea, especially when all you have are eggs and potatoes in the house. A lot of times, I am able to find eggs, and potatoes are always in the pantry, but I’ve run out of sausage or bacon, but the good news is, that you don’t need it! So if you don’t have any in the house just omit it, and eggs and potatoes are all you need!  And this is something quick and easy that I can just throw together on a Sunday morning, and hungry people are waking up!

I usually make this for hubby’s birthday, or a holiday breakfast, but if this is how you want to cook everyday, than go for it!

Eggs in Bell Pepper Rings, are another favorite of mine, because they are low carb, and good for you! They look so cute and presentable cooked and served in these bell pepper rings, and every time I make them, I get complements on how cool it looks! and they taste delicious!
