Since it is still January, and we could all use a little more luck this year, I thought I would make a delicious and healthy Black Eye Pea and Tuna Salad to start the new year off right.
This Salad is seriously good! And it is so versatile. You could add any kind of bean really, and even other vegetables, like peppers, green beans, black olives, lettuce, spinach, go crazy!
Ingredients
- 1 can of black eye peas, rinsed and drained
- 1 can of whole kernel corn
- 1 12 oz can of tuna in olive oil
- 1 cucumber peeled, seeded and diced
- 1 cup of cherry tomatoes sliced in half
- 1/2 cup of sliced green olives
- 1/4 cup diced onion
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Add tuna into a large bowl, and use a fork to break up the large chunks, and fluff it up.
- Add everything else, and toss together to combine.
- Serves 4
