Tuna and Black Eye Pea Salad

Since it is still January, and we could all use a little more luck this year, I thought I would make a delicious and healthy Black Eye Pea and Tuna Salad to start the new year off right.

I admit that I could have used this a few days ago when the record breaking Lottery was on! I don’t know about you, but I really thought I was going to win!
I don’t play the Lottery that often, but this was one of those times when you just had to play. I mean the jackpot was over 1.5 billion dollars!
So yeah….I should have eaten this salad then. Oh well. I will just have to win the next record breaking Lottery!

 

BLACK EYE PEA and Tuna Salad - So Delicious!

In all seriousness though, I love eating Black Eye Peas, and when it is combined with corn, and cucumber, it just tastes so light and fresh.
Black-eyed peas are a low-fat and low-calorie food, making them a healthy addition to a weight-loss meal. They are full of Fiber, and so delicious! This salad has no guilt! Tuna, and tomatoes, add to the flavor, so well.
 And with the addition of green olives, and onion, it has just the right amount of tang to each bite!

This Salad is seriously good! And it is so versatile. You could add any kind of bean really, and even other vegetables, like peppers, green beans, black olives, lettuce, spinach, go crazy!

Tuna and Black Eye Pea Salad

Ingredients

  • 1 can of black eye peas, rinsed and drained
  • 1 can of whole kernel corn
  • 1 12 oz can of tuna in olive oil
  • 1 cucumber peeled, seeded and diced
  • 1 cup of cherry tomatoes sliced in half
  • 1/2 cup of sliced green olives
  • 1/4 cup diced onion
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Add tuna into a large bowl, and use a fork to break up the large chunks, and fluff it up.
  2. Add everything else, and toss together to combine.
  3. Serves 4
