I have a weak spot for Italian food! I cannot get enough. This is one of my weeknight recipes, and it always tastes wonderful. My family has been making Italian Sausage and Spaghetti for as long as I can remember, and I remember that the smells of onion sauteing was the beginning of dinnertime! A lot of our weeknight family dinners began with the smell of onion frying up in Olive Oil. That was the time you knew to start setting the table for dinner.

Then I would come into the kitchen, and peek into the pot. Then came the addition of garlic into the pot, and your senses just start to awaken with hunger! And this is where the learning begins. “Stir in the pot, and don’t let the onions burn!” That is what every woman in my family said, when you started looking in the pot. “Put the sausage in, and let it get brown!” Yeah, yeah- that’s what they all say.

So now, you know they are trying to teach you something. “Don’t let the tomato paste stick to the bottom to much!” That is when I knew, that this was going to be MY dish. MY creation. My potential screw-up!

I would get so nervous, when they made me cook the rest. But I was a teen, and all I wanted to do at that time was listen to radio, and they would look at me and say: “You have to learn how to be a Woman!” and hand me a wooden spoon. And not only, did it teach me how to cook a whole pot of food, but it also taught me love for home-style family meals. Then my mother would say at the dinner table: “Isn’t it delicious? She made it all by herself.” And at that moment, I went from slouching in my seat, to puffing myself up with pride! I DID THAT! and boy it was good!

So now, I try to teach my daughter. But to be honest, she’s not having it. Not yet anyway. But she will. It takes time. When you are ready to start cooking- your ready to start cookin! Try this passed-down family recipe! I know you will love it:)

Italian Sausage and Spaghetti

Ingredients

  • 2 lbs Italian mild sausage links
  • 2 tablespoons olive oil
  • 1 small sliced onion
  • 2 cloves of garlic minced
  • 28 oz can crushed tomatoes
  • 6 oz tomato paste
  • 1/2 cup red wine
  • 2 tablespoons dried basil
  • 1 tablespoon salt
  • 1 tablespoon dried oregano
  • 1/4 cup finely grated Parmesan cheese
  • 1 lb spaghetti noodles

Instructions

  1. Cook spaghetti noodles according to package directions, set aside.
  2. Place a heavy bottom pan, or a porcelain coated cast iron pot, on medium-high heat.
  3. Add 2 tablespoons of olive oil to pot, along with sliced onion, and garlic.
  4. Cook until onion has softened, and browned a bit, about 7-8 minutes.
  5. Meanwhile, cut Italian sausages into 1/2 inch, bite-sized pieces, and place into pot with onions and garlic.
  6. Cook until sausage has browned, stirring frequently, about 7-8 minutes.
  7. Add tomato paste, and combine with sausage. Let tomato paste cook with sausage for a few minutes, then add can of crushed tomatoes.
  8. Add salt, basil, oregano, wine, and Parmesan cheese.
  9. Stir well to combine, and set heat to simmer.
  10. Let simmer for about 20-30 minutes, stirring frequently.
  11. Sprinkle with some Parmesan cheese.
  12. Garnish with fresh basil, and Serve with garlic bread.
