Salisbury Steak Meatballs with Egg Noodles

I’ve been very busy lately, meeting all of my favorite Food Network stars these past few weeks. My favorite TV chef by far, has to be the Pioneer Woman herself, Ree Drummond. There must have been aver 500people in line. I was in line for over 3 hours. It was totally worth it! It was so wonderful to be able to meet my favorite cook. And she is really tall! She was so nice, and she even took the time to take a photo with everyone who got a book signed!

I just love all of her recipes, because it is so close to the kinds of foods that I make on a daily basis for my own family.

One of my favorite PAST recipe of hers has to be her Salisbury Steak Meatballs. My version is a bit different, but so delicious! So my version is a nod to her!

Mine are made a bit different, but the flavor is all there. This meal is super simple, but yet the flavors taste as if you’ve been slaving over a hot stove all day. Served with Egg Noodles, this dish I’d delightful! It starts by sautéing mushrooms in butter, then pan frying the meatballs, just to get them browned on each side..

The sauce is thick and rich, and the meatballs get nestled in the beef broth gravy, and take there time to get tender, and full of flavor. It just takes a bit of cornstarch, to thicken the sauce just right!

You will not be able to keep the kids away from these meatballs. Your family will ask for seconds and thirds! This dish is so versatile, as it can be served with mashed potatoes, rice, pasta, grits even!

And I love that they can be made ahead of time as well. Once you make the meatballs, you can pop them raw, in the fridge, and prepare the meal later in the evening. You can make the noodles ahead of time as well. That way, this dish comes together quickly, and can be served on any busy weeknight! Believe me, I’ve done so many times with this meal!
