Leftover pot roast beef Taquitos recipe

Hey guys, I’m going to talk about using leftovers for a simple meal. I always seem to have leftover pot roast in the fridge from the night before. I usually just make some sandwiches with it, but when I was looking at the low carb whole wheat tortillas that I bought, I thought about making taquitos.

We have been using these wraps for everything lately, and they’ve been lifesavers for us not being able to eat much bread while cutting carbs. You can use any kind of tortillas with Taquitos.

Once a week we eat whatever we want, that way we don’t get too bored with the diet. So far so good! I have lost some weight, and Roberts sugar, it at a much better level.

All I had to do was heat up the leftover pot roast, shred it, and add 1 cup of green salsa verde sauce. So these Taquitos end up being pretty low carb! And they are so simple to make. Yes I could have made green salsa verde sauce from scratch, but I don’t think I could wait that long to eat them Taquitos, so I just got the bottled stuff. Good enough.
So here is an idea for some fast leftover Taquitos that are oh so yummy:)

Pot Roast Beef Leftover Taquitos With Avocado Dip

Ingredients

  • 3 cups leftover beef pot roast (shredded)
  • 8-10 corn or flour tortillas
  • 1 cup green salsa verde sauce
  • Vegetable oil for frying
  • For Avocado Dip:
  • 1 large ripe Avocado
  • 2 tablespoons green salsa verde sauce
  • 2 tablespoons sour cream

Instructions

  1. Using a large bowl, combine shredded leftover pot roast, and 1 cup green salsa verde. Place about 2 tablespoons of pot roast filling evenly on tortilla, and roll tortilla into a cigar shaped log. Repeat with remaining tortillas, and place them on a baking sheet.
  2. Heat oil in frying pan or cast iron skillet on medium high. Using tongs, place rolled tortilla seam side down in pan to fry. Cook in batches, 4 rolled tortillas at a time. Cook until golden brown on each side. About 2 minutes. Using tongs, remove tortillas from oil, and transfer to a paper towel lined plate.
  3. Avocado Dip:
  4. In a bowl, place avocado that has been mashed, along with green salsa verde sauce, and sour cream, and mix to,combine. Serve with Taquitos
