Well my Mother In Law is in town for a little vacation, and she is helping me out in the kitchen. Well actually you could say that I am helping her out. I was inspired by her kitchen to buy an antique stove, on which I will be posting about very soon.
She has been cooking on this antique stove for over 40 years, and while her stove is not in perfect restored condition, it still is a work horse! Feeding the whole family day in and day out for many years and two generations.
When she comes over, her sons always ask her to make this recipe that she just has a hand for. She started making this recipe when her boys were smaller, and she just threw together a few ingredients that she had on hand.
She is a very frugal cook and she is always saving money. She always has these simple ingredients in her kitchen to make a quick lunch or dinner without having to go out and gather things from the store.
She always has top sirloin in her freezer, and she always potatoes in her pantry. She is the ultimate pantry shopper. And it reminded me of an awesome blog post by Sarah Titus, where she saved her family so much money by coming up with creative meals from the pantry. You can check out her post here and I promise you too will be inspired to save money.
And this is my MIL Ruby’s simple signature dish. The flavor is wondrful and it is so filling. We usually do not need a side of rice, but the kiddos like it.
It comes together in a snap, and you can even throw in other veggies if you have them on hand. And if you need more inspiration on frugal money saving meals be sure to check out my Ham and String Bean Stew Recipe and my Chicken Stew Recipe.
Here is grandma Ruby’s recipe for steak and potatoes mixed together. (Yes, that is the name we have called it for over 20 years LOL)
Ingredients
- 1 pound top sirloin steak cut into thin strips
- 5-6 large russet potatoes chopped into bite sized pieces
- 1 small onion
- 3 tablespoons reduced sodium soy sauce
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- On medium high heat, add oil to large skillet, and add onion and potatoes, and cook until soft and translucent. Season with salt and pepper. Add sirloin to pan with potatoes, and cook until steak is no longer pink. Add soy sauce and combine. Let cook for another 5 minutes. Serve with a side of rice for a simple, fast meal.
