Summer is over. Although here in Los Angeles, it is still sweltering outside! Is that a word – Sweltering? I know I’ve heard it before. Anyway, I am bringing you a simple green taco sauce pork enchilada recipe, that starts in the slow cooker.
So as my pork is in the slow cooker all day, I can get a lot of errands done, and when it’s time to make dinner, just assemble enchiladas and bake for like 7 minutes!

Ingredients
- 1 - 2 pound pork shoulder
- 1 cup water
- 1 cup of green enchilada sauce
- 3 cups green taco sauce (divided)
- 4 flour tortillas
- 1 1/2 cups Mexican mix shredded cheese
- 1 teaspoon salt
Instructions
- Place pork shoulder along with 1 cup of water and 1 cup of green taco sauce, and teaspoon of salt in slow cooker, and cook on high for 5-6 hours or low 7-8 hours, until tender.
- Remove pork from slow cooker, and place into a large bowl. Using two forks, shred into strings.
- Pour 1 cup of green enchilada sauce into bowl with shredded pork, and mix to combine.
- In a medium size baking dish, pour 1 cup of green taco sauce to coat bottom, and set aside.
- Place a few tablespoons of pork mixture, and a bit of shredded cheese on flour tortilla, and roll into a cigar shaped log.
- Place in baking dish seam side down.
- Repeat process with remaining pork and tortillas.
- Top rolled tortillas with remaining cup of green taco sauce, and remaining cup of shredded cheese. Bake in a 400 degree oven for 5-7 minutes until cheese has melted.
