Eggs in peppers has become my favorite breakfast dish to prepare. I have been having a health issue, and my Doctor said that I must lose weight for a surgery, and that I should be on a low carb diet.
And while I still may prepare non low-carb meals for the kids, This is how it has to be for now.
This recipe couldn’t be easier, and it not only is healthy, it is so delicious.
I love that it looks so fancy as well!
Serving this to my husband left him impressed! He said that he will eat vegetables more often if there will be a fried egg in the middle:)
Ingredients
- 1 Large bell pepper
- 4 eggs
- 1 tablespoon butter
- Salt and pepper to taste
- 1-2 tablespoons water
- 1/2 teaspoon chopped basil
Instructions
- In a large skillet, on medium-high heat, add butter. When butter has melted, add bell pepper rings to pan and let cook for one minute. Slowly crack each egg into the center of each bell pepper ring, and sprinkle with a bit of salt and pepper. When egg begins to set, remove any egg that has seeped outside of bell pepper rings with spatula. Add 1-2 tablespoons water to pan and lower heat to simmer. Cover and cook for a few minutes more or until desired doneness. Transfer to dish and sprinkle basil on top. Serve immediately
