Pumpkin sausage pancakes

Yay! Pumpkin season is here! I will be making all kinds of goodies and snacks, that includes these delicious Pumpkin Sausage Pancakes.

Pumpkin Sausage Pancakes

I love Halloween. It is I feel my favorite holiday, because it is all about fun, food and dressing up!
I have always wanted to try making pumpkin pancakes and today I thought I might add sausage in the pancake as it cooks. It gave the pancake such a yummy goodness that my kids could not stop eating!
I can’t wait for Halloween to get here. The eating, trick-or-treating, the costumes, It’s the great pumpkin Charlie Brown!
So here is a great pancake recipe to kick off the month of fun!
Ingredients
1 3/4 cups milk
1 cup pumpkin puree
2 eggs
1 1/4 cups all purpose flour
1 tablespoons brown sugar
2 tablespoons granulated sugar
2 teaspoons baking powder
2 teaspoons pumpkin spice mix
1/2 teaspoon salt
1 teaspoon vanilla extract
6 links breakfast sausage
Begin by chopping up sausage links and cook in a pan on medium-high heat until
Browned, then remove from heat, drain fat and set sausage bits aside. In a large bowl combine flour,sugars, baking powder, salt and pumpkin pie spice and mix until well combined. In a separate bowl add eggs, pumpkin purée, vanilla extract, and milk, mix well then add wet ingredients to dry ingredients and whisk until smooth.
heat a skillet over medium heat. I cook in batches, by pouring batter by 1/3 cupfuls into skillet. I then place four or five bits of cooked sausage on surface of batter in skillet.  Cook until you see bubbles form on surface of pancakes and bottoms are browned. this takes about  1 minutes per side.
These pancakes were a hit with the family! The sausage gave the pancakes a salty-sweet flavor!
