I love using leftovers to create something quick and easy.
Nothing in my life is ever really quick and easy, but this meal is.
Quick and easy seems to be the trending thing right now, and so that is what I am focused on right now because I’m hungry!
The other night I made Chicken fajitas and so I am using a piece of grilled chicken and some sautéed veggies from that meal to make a quick lunch.
Ingredients:
1 large grilled chicken breast (leftovers)
2 heaping tablespoons mayonnaise 
1/4 cup grilled veggies
1/3 cup lettuce
1/2 teaspoon Dijon mustard
Ground pepper
Chop grilled chicken into bite sized pieces and place in a bowl.
Add chopped sautéed or grilled veggies, mayonnaise, chopped lettuce
Dijon mustard, a  pinch of ground pepper. I added some franks red hot sauce
To mine, because I put that $tuff on everything!
