 I love cooking with spices, and my Herbs De Provence Chicken recipe reflects that.
 I love roasted chicken any way I can cook it, and this recipe is simple and delicious. I use olive oil and dry Italian seasoning in the jar. You can find Italian seasoning in the isle with dried spices. It has oregano and thyme and basil. And I use it in almost all of my chicken recipes. I think it gives it so much flavor. Feel free to use any spices and herbs you love. This recipe is great for those who are following a Low Carb Diet! And if you are not going low carb, they also go great with my Easy Hot Pan Potatoes!

Oven Roasted Chicken Legs
Oven roasted chicken legs

Ingredients

  • Ingredients: 5 pieces chicken leg quarters
  • 3 tablespoons olive oil
  • Salt
  • Ground pepper
  • 2 tablespoons dry Italian seasoning

Instructions

  1. Preheat oven to 350°F. Rinse chicken leg quarters in water and pat dry. You can coat the bottom of a roasting pan with olive oil, or place non stick foil in pan; that is what I usually do. Rub some olive oil over all of the chicken pieces in the roasting pan. Sprinkle both sides of the chicken liberally with salt, ground black pepper and Italian seasoning. Arrange the pieces skin-side up.
  2. Cook for about 50-60 minutes at 350°F until juices run clear when poked with a sharp knife or the internal temperature of the chicken 170°F
  3. Remove roasting pan from oven. Transfer chicken to a serving plate. Cover with aluminum foil and let rest for about 10 minutes before serving.
